The Dalmore Whisky
Cragg&More’s Fine Wine List has been carefully chosen by
our Sommelier to cater to every taste and occasion. We enjoy
helping guests select exactly the right wine to pair with each
course or anticipated activity. Special tasting menus and
whisky tasting sessions can be easily arranged for you to enjoy
in the comfort of your chalet.
Wines and spirits are available from our wine cellar and can
be bought by the bottle with the exception of ‘The Dalmore’
collection which can exclusively be bought by the glass.
The Dalmore distillery has been producing exceptional single malt whisky since 1839. Located on the
northern shores of the Firth of Cromarty, deep in the spectacular Scottish Highlands, the distillery is
perfectly placed to take advantage of a feast of natural resources: from the waters of Loch Morie, found high
in the hills overlooking the distillery, to the golden barley of the rich coastal soils of the Black Isle. Being sited
at sea level is critically important. Enveloped by the salt air, the sea-facing traditional dunnage warehouses
provide the ideal conditions for maturation.
Dalmore - 1990 Vintage Single Cask Limited Release
Undoubtedly, this Dalmore has something magical. Coming from an ex-bourbon casks, it comes from this single cask
presence and incredible depth. The nose reveals aromas of a rare sensuality. Mouth never ceases to make us discover
new flavours. Finally, the final invites us to take the tasting from the start. A rare and particularly intense this single
malt customary of aging in sherry casks expression. Undoubtedly the number 1!

Aroma: A Sweet, Vanilla nose with hints of the Bourbon Casks coming through
Palate: intense, dramatic start, mellowing out on the tongue
Finish: A long lingering finish of Christmas Cake and Vanilla

Dalmore - King Alexander III
Crafted to honour the act of saving Scotland’s King in 1263, this expression unites six specially selected casks housing spirit of
perfect maturity. Whiskies matured in ex-bourbon casks, Matusale oloroso sherry wood, Madeira barrels, Marsala casks, port
pipes and Cabernet Sauvignon wine barriques are brought together in perfect harmony. Each cask gives it’s own flavour notes,
delivering a unique complex single malt whisky revered by connoisseurs.
Tasting Note
Aroma: Red berry fruits, fresh flowers and hints of passion fruit
Palate: Citrus zest, vanilla pod, crème caramel and crushed almonds
Finish: Sweet cinnamon, nutmeg, cloves and ginger

The Dalmore 15 Year Old
Twelve years maturing in American white oak ex-bourbon casks, is followed by being split equally between three different sherry
woods - Amaroso, Apostoles and Matusalem oloroso. After three years, the spirit is married together in an upstanding sherry
butt to allow the flavours to infuse. A robust, yet elegant spirit.
Tasting Note
Aroma: Orange marmalade, cinnamon and nutmeg
Palate: Mandarin, vanilla, ginger and crushed apples
Finish: Christmas spice and oak

Dalmore - Cigar Malt Reserve
A wonderfully elegant pink champagne from a great house. Elegant and wine like with very fine bubbles and beautiful red
summer fruit overtones this is a must for all Pink Champagne lovers.
The Dalmore 12 Year Old
Matured for an initial nine years in American white oak ex-bourbon casks before being carefully divided. One half continues
it’s maturation in bourbon barrels, the other half is transferred to 30 year old Matusalem oloroso sherry casks. Complex, yet
balanced, The Dalmore 12 year old is the epitome of the Dalmore house style.
Tasting Note
Aroma: Cinnamon, vanilla and red fruits
Palate: Tropical fruits, banana toffee and vanilla ice cream
Finish: Orange zest, bergamot and crushed spices

Cragganmore is a Scotch whisky distillery situated in the village of Ballindalloch in Banffshire, Scotland. The stills used in the
second distillation (the spirit still) of Cragganmore whisky are unique in having a flat top and being relatively short. The stills’
shape has a definite effect on the taste and aroma (nose) of the whisky.

own famous wines so 2007 is the final vintage. A remarkable wine.

A great Syrah wine from one of the Rhônes up-and-comings! A great year, this is powerful, spicy and fruity. Enjoy this with all
your red meats and game.
St. Estephe – Château de Pez 2007 €48
A mix of Cabernet Sauvignon and Merlot, Pez is a full bodied wine drinking perfectly right now. From a reputed Château
on the left bank of Bordeaux, fruity and round this is a wine to accompany all red meats and game.
Châteauneuf du Pape « Tradition » Château de la Gardine 2006 €40
Grenache complemented by Syrah, Mourvedre and Muscardin gives this wine its rich, opulent flavour. Dark fruits, eastern
spices, ground coffee and cocoa beans on the nose, La Gardine is full-bodied with a deep fruity flavour. An excellent wine as you
would expect from one of the top producers in the Châteauneuf du Pape region.
St. Emilion Grand Cru Classée B, Château Magdelaine 2003 €95
A stunning, elegant, rich wine from Bordeaux’s right bank. Essentially Merlot this is a rich, opulent wine from one of the
highest classed St. Emilion producers.

Côte Rotie « Rose Pourpe » Pierre Gaillard 2010

Strong spicy wine with beautiful toffee undertones. From one of the steepest parcels of vines in the Northern Rhône valley this is
a beautiful Côte Rotie produced by one of the top producers in the Valley.
Non-French
Spain – Toro « Prima » 2010 €20
A much lesser known appellation than its neighbours in Rioja and Ribera del Duero, the Toro is no less a fine wine. A powerful,
fruit bomb it is made almost entirely from « Tinto de Toro » a grape which is only found in this region. A great discovery. Drink
with red meat.
Italy Chianti Classico – Castello di Ama 2007 €50
Essentially Sangiovese, this fine Chianti is full bodied but elegant. With a fruity and slightly woody flavour to it this is a wine to
pair with cured meats, red meats and stronger cheese.
Italy Barolo « Del Vasto » – Castino Ufficio 2008 €55
Barolo ranks among the finest of the Piemonte wines in Northern Italy. Strong with dark fruits, this wine has a great complexity
with great length. A wine to pair with red meats and game.
Champagne
Bollinger «Special Cuvée» €45
A wonderful champagne and the choice of James Bond. Essentially Pinot Noir with a little Chardonnay the Special
Cuvée exudes elegance and refinement. Lively but with wonderful brioche flavours coming through this champagne
is great pre-dinner or even with dinner.
Pol Roger Vintage 2002 €58
A blend of the best Pinot Noirs from the Montagne de Reims and peerless Chardonnays from the Côtes de Blanc
combine to make this an outstanding champagne. Rich and intense but with a long, delicate finale this is a sure
winner !
