We are filling rosters for Junior, Senior and Middle School stalls.
It is always a really fun day where our whole community gets involved!
Middle School is responsible for running the Sideshow Alley this
year. This will involve all four Houses. The activities that will be part of
Sideshow Alley this year are:
‘Treasure Hunt’, ’Go Fish’,’Lucky Dip’, ’Balls in a Hoop’,’Knock a Block’,
‘Putt Putt’ and ‘Dunking Machine’.
All of the stalls will be run from 10am – 3pm. Each student in the
Middle School has been asked to give one hour to running their stalls.
If any parents are available and are willing to help out on these stalls,
would you please email teresa.simmonds@flcr.qld.edu.au

Senior School is responsible for running a number of stalls this year
that will require the involvement of both parents and students from
across Year 10-12. These stalls are:•
Milkshakes and Smoothies;

Soft Drinks;

Slushies;
•
Coffee machine - Cafe; and
•
Hot chips.
Each student in the Senior School will be asked to give one hour on
a stall at Funfest. We also need parent helpers for each session.
Any parents who are available to help anytime between 10am–7pm

Sweet Recipes
The Sweet Stall this year would love to have lots of home baked sweets. Here are a
few tested and successful recipes for those that would love to help. Homemade
sweets make our Sweet Stall a success. Please bring to the front office on Friday
afternoon or Saturday morning of Funfest. All homemade goods must have an
ingredients tag. Sweet trays are available from Junior School office.
Fudge
125g unsalted butter
2 Tbsp golden syrup
1 can condensed milk
1 cup brown sugar
75g – 100g dark chocolate (to taste - less makes ‘milk’ chocolate fudge, more
makes ‘dark’ chocolate fudge)
1. Melt butter in saucepan
2. Add golden syrup, condensed milk and sugar
3. Stir over a low heat until simmering.
4. Simmer gently 15 mins – stir frequently.
5. Remove from heat and allow to cool a little
6. Add chocolate in batches and stir in
7. Beat until combined and smooth.
8. Set in a baking paper-lined slice tray for ease of removal; allow to cool completely
before turning out and slicing.
Coconut Ice
Ingredients
2 egg whites
2 cups (315g) icing sugar
1 cup (90g) dessicated
desiccated coconut
1/2 teaspoon vanilla
250g copha (kremelta)
few drops red food colouring
Preparation method
1. Beat the egg whites a little - just to combine - and then mix in the sugar coconut

3 Cups Caster Sugar
1 Cup water
2 teaspoon white vinegar
Sprinkles
12 x mini patty cakes
Combine ingredients in med saucepan
Stir over medium heat till sugar dissolved
Bring to boil and do not stir for 15 min (mix will start to darken). Pour into cases.
Wait 2 minutes then decorate with sprinkles.
