JOHN DEE WARWICK BEEF –
John Dee cattle are handpicked from a network of some of Australia’s best farming families in the New England region,
famous for their production of extremely high-class cattle. The beef is derived from premium European breeds of cattle,
predominantly Black Angus, but also Murray Grey and Charolais.
They enjoy a healthy grain diet that is free of antibiotics and chemicals. This, combined with aging means they have superior
marbling, and a seriously good deep flavour.

ISOLA CHIANINA BEEF –
Isola Chianina cattle are ethically raised with care and respect in order to produce great tasting beef.
The ancient Chianina breed originated in Val di Chiana in Tuscany and is renowned for meat, which is lean, dark red in colour, and
retains a marbling of fat through the muscle. Most importantly Chianina beef is very tasty and tender.
Isola Chianina cattle are farmed in South Gippsland which has naturally high rainfall producing rich and varied pasture. Animals grow
slower which translates to more flavour in the finished product.
The meat is dry aged in the time honoured traditional way, a practice that is no longer commonly used due to its cost.
This combination of breed, environment and conscientious processing is what sets Isola Chianina beef apart and allows you to
experience the true taste of this Tuscan breed bringing the Italian countryside to your ‘cucina’.

MOONDARRA WAGYU GRASS FED BEEF –
Moondarra Tajima cattle graze on the green pastures that grow atop the volcanic soils of the Moondarra Gippsland Mountain
Rivers region. Tajima cattle are the type of Wagyu grown in the Hyogo prefecture, from where the famous “Kobe” beef
originates. The beef may be dry aged on the bone to order. This will produce extra depth and complexity of flavour and a
whole new dimension of tenderness. Grass-fed, the Tajima has the melt in your mouth sweetness of Kobe beef as well as the
wonderful minerality and rich flavour of grass-fed beef, often seen in Scottish or Argentian beef.

Berkshire, Wessex Saddleback, Tamworth and Duroc. They are farmed free range in Strathfieldsaye, central Victoria,
where climatic conditions provide a perfect environment to raise pork as mother nature intended.
The end result is heritage pork, rich and hearty in flavour with distinct marbling and creamy fat.

SMALLGOODS Gamekeepers Salami and Cured Meat Gamekeepers’ range of salami and cured meat are made using the finest ingredients using old-fashioned techniques and
recipes. The Berkshire pigs are hand selected as live animals and grown to the correct age and size in country Victoria. The
meat used in Gamekeepers’ smallgoods is further selected on colour and muscle confirmation. The secret of good smallgoods
is to use good meat to start with, therefore only primal muscles such as rump, silverside and topside are used. Trim, which is
commonly used throughout Australia in salami and other smallgoods, is not included in our products.
Isola Chianina and Moondarra Wagyu cattle go through the same strict selection process before being transported over night to
Vecchiet Smallgoods in NSW, where the award winning team of first and second generation Italians produce what is arguably
the best traditional Salami products made on a commercial scale in the country. Each batch is gently fermented and cured to
ensure no bitter acid aftertaste is present. This is the final stage of production, which is tightly controlled by Father and Son
team Enzo and Daniel Vecchiet. They have developed the natural nitrate range of salami exclusively for Gamekeepers.

Gamekeepers Smokehouse Gamekeepers smoked products are all handmade.
For our pork products we use 100% Victorian pork, mostly rare breed Berkshire pigs. Our hams are never tumbled, which is a process widely used with commercially made ham. Tumbling, sometimes for 18 hours, enlarges the muscle fibre cross-section which
increases water retention capacity allowing hams to gain in excess of 50% in weight when pumped with soy proteins, vegetable gums
and water. Commercially made hams are often made up of different pieces of the animal. Gamekeepers hams are made from one
pork leg with the starting weight the same as the finishing weight. We are proud of the way we make our hams, which is reflected in
the taste.
