His 100-acre farm is home to Eigensinn Farm, which has been ranked one of the top 10 restaurants in the world. Supporting and eating local is one of his passions, and he shared the importance of supporting local agriculture with NAIT Culinary students and with Gastropost. “Try to locate local farmers at the market or through a CSA. You can make relationships with the farmers where you get your food.” Michael has lots of open space for his pigs and chickens to run free. But gardening is important too and he encourages you to try your hand at it even if you don’t have your own farm. “There are lots of little container vegetables like spinach or arugula. It’s always amazing what you can grow in a small space.” If you’re enjoying local ingredients in your #gastropost this week, make sure to include the #tasteab tag for an extra chance to be in the paper!
