Since 1980, the festival has been celebrating the unity and diversity of the city’s lesbian, gay, bisexual and transgender community. In honour of this year’s Pride Festival, we want you to show our support at the table by eating foods featuring all the colours of the rainbow flag. Make it your mission to find foods the colours of the rainbow and show us your pride, Edmonton! “Went for an all natural whole food rainbow for this year’s pride celebration,” says Gastroposter Jennifer Campbell MISSION INSPIRATION Jenny Steenstra @jennyvsjenny Fresh garden ingredients top my award-winning hummus Amit Chawdhary Third-time Gastroposter Watermelon fries and strawberry dip to cool you down Stephen Kozma @tripleheartbeat A classic dip for asparagus is a poached egg Cindy Nguyen @cindurh Cute mini corn dogs from Denizen Hall Mandy Moon @s1ncerity88 Salsa fresca dipping party for tortilla chips Sheridan McLaren @shefsheridan Avocado + sour cream = yummy Linda Whitworth Frequent Gastroposter Chocolate-dipped almond biscotti Gaylene Babichuk Frequent Gastroposter Sweet potato and harissa dip made a great dressing Alberta Barley’s Linda Whitworth recommends pairing local brightly coloured vegetables with Alberta barley for your meals. Linda says that barley combines well with most foods so it is a perfect addition to your colourful dishes. “It’s a burst of summer,” she says. To beat the heat, you can precook barley in a rice cooker or slow cooker and keep it stored in the fridge for four days for a hearty addition to meals. “I love barley in salads,” Linda explains. “Get a nice salad filled with summer vegetables and throw some barley in. I’d recommend cooking the barley in a broth. It will take on the flavours in the broth and give it a bit more added flavour.” She enjoys putting barley in her Greek salad as a colourful and delicious dish.
