The Minnesota Technical Assistance Program (MnTAP) is seeking a junior or senior college student to lead a project focused on water conservation and energy efficiency at Lloyd’s Barbeque in St. Paul, MN. The intern will study cleaning practices on-site during three different shifts, with an emphasis on the third shift where the majority of cleaning takes place. The intern will consult with staff to assess potential procedure and equipment changes that will reduce water and energy consumption. As time permits, there will also be a focus on reducing solid waste, such as food waste, as well as packaging waste. As part of this project, you will be asked to complete the following tasks: 1. Measure plant water usage to establish a baseline. Record water usage from hoses and other processes and compare these numbers to current water data provided at Lloyd’s BBQ. 2. Evaluate cleaning practices during each shift at Lloyd’s BBQ, with the third clean-up shift as the main priority. Work with cleaning staff, supervisors, and equipment vendors as needed, to propose changes that will save water and energy. Solutions may involve: changes to types of hose nozzles and nozzle pressure, how hoses are used by employees when cleaning, where dry-cleaning methods might be beneficial, and more. 3. Assess production processes for the potential to reduce wasted food product that is sent to rendering. 4. Estimate reduction, reuse and diversion potentials (weights/volumes) and costs associated with implementation. 5. Prioritize recommendations based on criteria such as estimated payback and ease of implementation. 6. Work with staff to test recommendations related to production and cleaning procedures. Work to ensure changes meet food sanitation standards for the facility. 7. Participate in company meetings as scheduled. 8. Implement and document approved changes or outline a strategy for implementation. Establish metrics to track improvements, including materials and energy use. 9. Summarize findings in a detailed report. 10. Present findings to the company and at MnTAP-hosted public presentation event. As an intern, you will work at the company and report back to MnTAP. The position is full time, 40 hours per week, for three months to start after the conclusion of spring semester or quarter. Pay is $13/hour, with a lump sum stipend of $1,000 upon completion of the project deliverables: a final report and presentations.
