favorite way to eat sweet potatoes plain and
simple - Wash, peel, dice or slice. Spread
evenly on a baking pan or stone. Sprinkle with
olive oil or coconut oil. Bake in 400 degree
oven for about 40-45 minutes or until edges
start to brown and crisp. No need to sprinkle
with sugar, the sweet potatoes are really
sugary now, so the crispy edges are my
favorite part.You can sprinkle with cinnamon,
ginger or nutmeg for a spicy flavor.
Matter of fact: They are so good now, I like to
cut a small raw one in small cubes or shred
one and use as a crunchy salad topper .

HomemadeTortillas anyone?
You need: 1 1/2 cups of water, 1 egg, 1/2
cup organic cornmeal, 1 cup unbleached
flour, 1 1/2 teas salt
Mix all ingredients in a mixing bowl.In a
non-stick skellet over medium heat, ladle
about 1/4 cup of mixture. Using spoon,
spread and even out the tortilla circle so
it's not too thick. Wait about a minute, flip
over and brown the other side. Makes
about 12.

Spelt is a non-hybrid primitive relative of our

9,000 years. Spelt has a unique nutty flavor
and because of its high water solubility, its
vital nutrients are quickly absorbed into the
body. Organic Spelt Flour can be used in
most recipes calling for wheat flour especially yeast and quick breads. Because it
is water soluble, you have to use a little more

COOLER POLICY; If we do leave a

Credit: We must be notified within 5 days if
you are missing a product, or have a problem
with a product. Otherwise we have to assume
the food was consumed or improperly stored.
Returned items need to be picked up the
following delivery day (within 30 days).
Credit will be issued when the truck comes

Give Your Garden A Calcium Boost
Save your eggshells for your garden. I have a
container in the refrigerator just for the egg
shells. Once they dry, it is easier to mash them
down into smaller pieces. Then you can put the
pieces in your blender to make a calcium
supplement for your garden!
(Cover your eyes to keep out the small
particles floating in the air as you blend)
SLOW COOKER CHICKEN & VEGETABLES
I love easy one pot cooking. This recipe fills
your home with aromas of cinnamon and garlic.
Ingredients:
2 large QUAIL COVE SWEET POTATOES
1 large organic onion cut into wedges
8 whole organic garlic cloves - skin removed
2 tablespoons of cinnamon
1 Gerber Roaster Chicken or Fryer
2 tablespoons of Amish Butter
garnish of fresh parsley
Directions: Wash sweet potatoes and cut into
chunks. Put sweet potatoes chunks, onions
wedges and garlic cloves in the bottom of a
slow cooker and sprinkle with half the
cinnamon.
Place chicken on top of the vegetables and pat
dry with paper towel. Rub chicken all over with
the butter and sprinkle the cinnamon all over
the chicken evenly.
Cook on low for 8 hours or on high for 4 hours.
Crustless Sweet Potato Pie
Ingredients:
2 cups mashed QC SWEET POTATOES
1/2 cup cornstarch or unbleached flour
1
cup unbleached cane sugar
3
Amish brown egg yolks
1
cup milk, evaporated milk or substitute
1
teaspoon vanilla extract
1/2 teaspoon cinnamon
2
tablespoons melted Amish butter
Directions:
Preheat oven to 350 degrees. Spray a 9" pie
plate with non stick spray.
In a large bowl add the remaining ingredients
and mix well with a wire whisk or mixer. Pour
into prepared pie plate.
Bake 45 minutes or until custard is set.
Maple Syrup Bars
Ingredients:
Base:
1/2 cup softened Amish Butter
1/4 cup organic brown sugar
1 cup unbleached flour
Topping:
1 cup Maple Syrup
3/4 cup organic brown sugar
1/2 cup walnuts
1/4 cup Amish butter
2 large brown Amish Eggs
2 Tablespoons flour
pinch of salt
Directions: To make the base: Preheat oven
to 350 degrees. Combine butter, brown sugar
and flour, stir until the mixture is crumbly. Press
mixture into an 8" baking dish. bake for 10
minutes.
Topping: In a saucepan, combine the maple
syrup, brown sugar and walnuts and bring to a
boil. Reduce heat and cook over medium-low
heat for 5 minutes. Remove from heat and add
butter and stir until melted.
In a bowl, beat the eggs with the flour and salt.
Add egg mixture to maple syrup mixture and
stir to combine. Pour over the base and bake
for another 25-30 minutes . Cool before cutting.
I took a Sunday afternoon walk on the most
beautiful day of the year so far. I walked along
the entire small stream that borders our farm
with no fear of ticks or snakes. But the red fox
that crossed my path was the largest I had ever
seen.
During the summer, there is algae, sticks and
various kinds of debris covering the bottom of
the stream. But this afternoon, the water was
flowing very swiftly because of all the rain and
melted snow from our adverse winter weather.
Because this adverse weather created such a
rapid current of water, gravel and the massive
root systems of the trees were exposed.
Often adversity flows over our lives, exposing
where our roots are. I have to admit that far too
often I lean on the arm of flesh. Adversity
exposes in where I am really trusting. In
Jeremiah 17:5, he says,"...cursed is the one
who trusts in man, who draws strength from
mere flesh and whose heart turns away from
the Lord." Verse 7, " But blessed is the one
who trusts in the Lord, whose confidence is in
Him. They will be like a tree planted by the
water that sends out its roots by the stream. It
does not fear when heat comes: its leaves are
always green. It has no worries in a year of
drought and never fails to bear fruit."
I do not want my heart to be drawn away from
the Lord. And I'm pretty sure you don't either. I
trust in the Lord, but I also need to be confident
in Him. Confident that He is working all things
out for our good, no matter what it looks like.
We do not need to fear or worry because our
roots are in the streams of Living Water.
