Small quantities of organic acid can be added during the process to promote the hydrolysis of sweeteners. The natural acidity of caramel can eventually be neutralized after caramelization. Presentation and naming of caramel would be able to refer to the original raw material that is made from only if it is the only glucidic substance used ”. French AFNOR Norm NF V00V00-100 • Aromatic caramel is considered as a food ingredient. AROMATIC CARAMELS THICKENED AROMATIC CARAMELS These aromatic caramels are thickened with allowed food-thickeners. Thickened caramels help to keep a good viscosity giving the caramel an unctuous and pouring aspect even at the best before date. It prevents the caramels from going up along the inner surface of the cup, so that the milk product (flan, icecream, dessert) is not “ soaking ” in a caramel syrup. It also gives good properties for particular applications (short texture, falling). NEUTRALIZED AROMATIC CARAMELS Natural acidity of these products is neutralized after caramelization. They are used to avoid “browning” during the process of pasteurization. They are also used in products subject to pH.
