Either we buy much more than we consume, or we discard food simply because it is not “up to standard”. We can all play a part in improving our food systems, even in our homes, by making good decisions about what food we buy and eat, and by reducing food waste. It’s very common to buy a bag of potatoes, garlic and onions from the supermarket, and end up with more than what you need. Here’s how you can combine these “side ingredients” to make a hearty dish. Heat the oven to 200°C and lightly grease the cups of a muffin tin. 2. In a large mixing bowl, mix together the mashed potatoes, the eggs, cheese and spring onions/ chives. Season the mixture according to how seasoned your leftover mashed potatoes were. 3. Line each cup of the muffin pan with a slice of bacon. Drop a spoonful of potato mixture in each muffin cup. Sprinkle the tops with the remaining grated cheese for a lovely golden crispy top. 4. Bake for 20 minutes, or until the potato cups are set. You can tell they are ready when they have browned on top. Let them cool for about 5 minutes in the muffin pan, then gently use a spoon or knife to release them from the pan. Serve warm with dollops of sour cream. Here’s a recipe for creamy and cheesy bite sized mashed potato puffs that make a quick breakfast side or appetiser. Contributed by Biona Boon Ingredients • 2 cups mashed potatoes • 2 large eggs, beaten • 1 cup grated Parmesan cheese (keep 2 spoonful aside for topping) • ¼ cup diced spring onions or chives • A pack of bacon • Salt and freshly ground pepper • Sour cream, to serve *add a little cube of mozzarella/cheddar cheese in the centre for extra cheesiness Food styling and photography Food and product styling became a passion by accident while I was on break from my long-time career in advertising. In the last five years, my experience in styling food and products has taught me valuable, insightful and exciting lessons on preparing, conceptualising and styling food and products for the camera lens. Being married to a commercial photographer has also allowed me to have both an awesome mentor and my harshest critic. I have in the course of these 5 years developed my own unique style that I use and adapt according to my client’s requirements and needs. Below is a list of tips and tricks for basic food styling that I have found most useful when doing commercial, editorial or even personal styling of food and/or products. 1. Choosing your plates • Size – The proportion of food to plate is important. Unless you are aiming for an artistic visual spectacle in fine dining, the food served should be in proportion to the plate. It should neither appear too scant with a lot of space around it, nor overcrowded, which creates a messy composition. For example, you should vary your plate sizes according to the food you are featuring, such as placing a little entrée on a 6-inch dish, rather than on a 12-inch dinner plate. • Style – Have a classic selection of white plates and bowls. White is a neutral shade and will complement the set up when the food is garnished. 12 IKEA FAMILY news In contrast, patterned plates will complicate the composition and distract the eye from the food. You can also use plain, colored plates to liven up the dishes without spoiling the visual effect. 2. Capturing the essence • Focus – While you may be tempted to rely on pretty plates to make the food look more appealing, remember it is vital for the food itself to look good. Always concentrate on capturing the essence of the dish, such as the tenderness of the roast with its creamy gravy. Identify the highlights of the dish and make every effort to focus on these areas. • Angle – Just as we have our preferred angle when being photographed, so does food. To find its most photogenic angle, capture the dish from multiple angles and camera heights to figure out which camera position best suits it. • Timing – Set up for the shoot in advance and capture food as soon as it is plated when the dish is still moist and fresh. When exposed to air, meats dry out and salads wilt. To combat these challenges, brush the cooking juices over the meat; rinse the vegetables in cold water and apply the dressing with a diffuser to keep the salad light and crisp. The shorter the wait time before taking a shot, the higher the chance of capturing the food at its best. • So, get the camera ready in the angle you think is suitable and quickly execute the shot as soon as the food is ready! 3. Setting the mood Plan ahead of time how you want each dish to be presented. What is the overall mood you wish to convey? • Choice of colours – You can achieve warm or cool tones for the image through the choice of colours. Decide on what you prefer before the photography session and then choose your plates, cutlery, background, and any other additional props. A cool blue tone will create a calm, harmonised image while warm colours such as red and coral are vibrant and eye-catching. • Choice of materials – Different props and materials for the background can determine and enhance the mood of the overall setup with their textures. For example, a wooden table would be suitable for a nature theme, while a silky fabric would lend a soft feel to the shot. Classic, polished cutlery will give the dish a contemporary mood while an aged embossed set will make it look more rustic. • Choice of props – Two rules of thumb here: balance and creativity. Do not clutter your shot with too many props (this can muddle up your picture!) and avoid burning a hole in your pocket with expensive ones. Consider what you already have and be creative with them – pretty papers can become placemats; a clean curtain can be turned into a tablecloth; your food can also be photographed straight from your frying pan. And, don’t forget – small details are critical too. A fresh napkin, a lit candle or flowers tied with a satin ribbon can create a mood of elegance. 4. Capturing light Light is one of the trickiest things to set up. So, rather than trying to create a good light set-up, the quicker way is to understand natural light – diffused light is best for capturing food – and know when it is at its best for photography. • Outdoors – On a regular day outdoors, the morning hours of 7am - 9am, and the evening light of 6.30pm - 7.30pm are the best timings for capturing food. Try out different plates and cutlery and experiment with presentation. You can only learn more about food and understand its chemistry when you are unafraid to make mistakes. Explore how the different styles and combinations or arrangements work and which combinations look best. It is only then that you will find your distinctive style and perfect it through practice. In a recent Life at Home survey conducted by IKEA, it showed us that ‘comfort’ is not about any single home furnishing or product function, rather, it’s about creating an environment where household members can be with each other, relax, and live their best lives. Home is about connecting with family and friends to create and share memories. Each room has a story to tell; a laugh, a surprise, moments to remember. There are many things to think about. Balance and harmony • • A balanced room is created through a harmonious interplay between material, colour, lighting, furnishings and the proportions of the room. However, to create an interesting and personal atmosphere, there needs to be contrast between objects, patterns, shapes, sizes and textures. • • • • Flooring should be chosen in accordance with the function of the room. For instance, have an easy-to-clean surface e.g. ceramic tiles in the kitchen area. Using rugs on top of laminate flooring helps top absorb sound and soften the atmosphere. Large floor patterns demand large spaces. Light floors make the room appear larger, while dark floors make it appear smaller. Walls • • • • • Painted wall surfaces are easier to maintain and more durable if treated with a silk or satin finish rather than a matt finish. A free-standing glass wall or a low wall within a room divides the functional space, creating new proportions; while still letting light through and maintains an open atmosphere. Using the same colour scheme within a home creates unity and an illusion of more space. Using mirrors on walls can make a room appear twice the size. Furniture such as bookcases or sideboards can also act as room dividers with added storage functions. Windows •Windows are part of the architecture and need to be in harmony with the size, shape and style of the room. •Larger windows can frame a view and let light in while smaller ones ensure some privacy. Doors The balance is improved with a coloured wall. 16 IKEA FAMILY news The balance can also be improved by adding another piece of furniture, textiles or other objects. •A wide door suggests hospitality, a narrow door suggests a secret passage. •A space-saving sliding door can also act as a wall. A dark colour on the back wall of a room visually decreases the depth of the room making it appea wider. The back wall appears to come forward. This effect is emphasised if "warm" colours are used. Using different colours on the left and right long walls create an imbalance and the room feels incorrectly colour co-ordinated. Horizontal patterns make the room appear lower. A corresponding pattern along the floor would make the room appear wider. A vertical pattern on the walls make the room appear to be higher. Different colours further emphasis this. A vertical pattern solely on the back wall creates a similar effect although not as strong. Diagonal patterns, rectangles, circles, and so on, all create different visual effects. •Different colours, patterns and application techniques change the room dramatically. •There are no set rules for how to work with several colours in a room but usually the most successful approach is to let one colour dominate and to let the others be more neutral. •A ceiling that is slightly darker than the walls makes a room appear to be lower and wider. • A matt white ceiling reflects the light back into the room without causing glare. The balance of the room is improved with pictures. In these examples, the heaviest colour is on the floor. The lighter colours on the walls make the room appear spacious.
