Celiac disease (CD) affects an estimated 1 in 133 persons in
the U.S. with 97% undiagnosed. The average number of years
to diagnose a symptomatic person is 11; average number of
pediatricians a child will see prior to diagnosis, 8; and, only 35%
of patients experience chronic diarrhea. Consider celiac disease.
The disease can manifest in nearly any organ system, often
leading to missed or delayed diagnosis with potentially serious
consequences. This evidence-based activity will outline the
clinical presentation, risk factors, diagnostic strategies and
treatment considerations for the disease.

Dr. Benjamin Lebwohl, MD, MS, received his MD from
Columbia College of Physicians and Surgeons and then
completed his internship, residency, and chief residency in
internal medicine at Columbia. He stayed at Columbia as a
fellow in Digestive and Liver Disease, during which time he
obtained a Masters in Patient Oriented Research from the
Department of Biostatistics at the Mailman School of Public
Health. He was a post-doctoral fellow in a National Cancer
Institute-funded Training Program in Cancer-Related Population
Sciences under the mentorship of Alfred Neugut. He joined the
faculty of the Celiac Disease Center at Columbia University in
2010.
Laurie Steenwyk, M.Ed., RD/LDN, is a registered and licensed
dietitian with over 20 years experience in dietetics. She is
currently employed by Pardee Hospital in Hendersonville where
she is a clinical dietitian. She received her undergraduate
degree from Warren Wilson College and her Master’s Degree
in Nutrition from the University of North Carolina at Greensboro. Ms. Steenwyk specializes in medical nutrition therapy for patients
with celiac disease and related disorders, and has worked
extensively with this population for the past 10 years. She is a
member of Dietitians in Gluten Intolerance Disorders, a practice
group of the Academy of Nutrition and Dietetics. She directs the
Hendersonville Celiac Support Group and is the Nutrition Advisor
for the Asheville Gluten Intolerance Group. Her professional
interests include gastrointestinal disorders, food allergy and, of
course, celiac disease.

OBJECTIVES
Upon completion of this knowledge-based educational activity,

• Identify characteristics of celiac disease (CD) and gluten
sensitivity

State the most cost effective means of testing for gluten related
disorders

Discuss when to recommend referral to a specialist

Identify common nutritional deficiencies in celiac patients and
strategies to correct them
Identify unexpected sources of gluten exposure that may
prolong recovery in the celiac patient
Discuss dietary factors besides gluten which may cause
gastrointestinal distress in celiac patients
Describe current research and anticipated trends in the
management of CD
