Happy Holidays
To Our COA Seniors,
Friends and Volunteers
November and December are very busy months with all the various holidays we observe and/or celebrate. It’s a biggest time of
the year for families and friends to get together and observe the
holidays according to their customs.
This is the season of giving. Giving does not necessarily mean
something monetary — giving of the heart and hand can be very
special. Help someone make new happy memories by giving
them your heart and hand. You’ll also be surprised how much
gratification you will receive for doing such.
Another year has passed and much to our delight, we have welcomed many new seniors to he center. But with great sadness,
we have also lost some of our beloved seniors whom we will miss
dearly. Fortunately, we were lucky enough to have them in our
lives so we have lasting fond memories of the times we were together. So — remember your loved ones and the friends you
have come to cherish. Make some new and wonderful memories.
The staff at the Boxford COA would like to wish you fantastic Seniors a Healthy, Happy, Safe and Wonderful Holidays and may
2015 be good to you all.

French Toast in a Mug
Got this recipe from Mr. Food’s Test Kitchen at www.mrfood.com — great place to find food recipes. The Cooking’ W/Anna’s class
made it in November and it went over great. Anna used a thick slice of challah bread so only one slice was necessary. Breakfast on
the go just got even better with our French Toast in a Mug recipe! In just about 2 minutes you can have a decadent breakfast that
tastes like the perfect cross between French toast and rich bread pudding. Add a drizzle of syrup to take it over the top!
Ingredients:
2 slices bread, cut into 1/2 inch cubes
1/4 cup milk
1 egg
1/2 teaspoon vanilla extract
1 tablespoon sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
Maple Syrup or Confectioners Sugar (Optional)
What to do:
1. Coat a 12-ounce microwaveable coffee mug with cooking spray. Place bread cubes in mug and press down lightly.
2. In a small bowl, whisk milk, egg, vanilla, sugar, cinnamon and salt. Pour egg mixture over bread cubes and let soak in for a minute.
3. Microwave on high 1 minute, then add 10 seconds (in micro) at a time till it’s set.
Options:
1. Mr. Food used challah bread but you can use whatever bread you have on hand.
2. Serve with maple syrup or sprinkle with confectioners’ sugar.

Sweet Stuff
How Sugars and Sweeteners Affect Your Health
Most of us love sweet foods and drinks, but after that short burst of
sweetness you may worry about how sweets affect your waistline
and your overall health, is sugar really bad for us? How about artificial or low-calorie sweeteners? What have scientists learned about
the sweet things that most of us eat and drink every day?
Our bodies need one type of sugar, called glucose, to survive. Glucose is the number one food for the brain and it’s an extremely important source of fuel throughout the body. But there’s no need to
add glucose to your diet, because your body can make the glucose it
needs by breaking down food molecules like carbohydrates, proteins
and fats.

ful effects of too much sugar.
Over time, excess sweeteners can take a toll on your health. Several studies have found a direct link between excess sugar consumption and obesity and cardiovascular problems. Because of these
harmful effects, many health organizations recommend that Americans cut back on added sugars. But added sugars can be hard to
identify. On a list of ingredients, they may be listed as sucrose
(table sugar), corn sweeteners, high-fructose corn syrup, fruit-juice
concentrates, nectars, raw sugar, malt syrup, maple syrup, fructose
sweeteners, liquid fructose, honey, molasses, anhydrous dextrose or
other words ending in “-ose,” the chemical suffix for sugars. If any of
these words are among the first few ingredients on the food label,
the food is likely high in sugar. The total amount of sugar in a food
is listed under “Total Carbohydrate” on the Nutrition Facts label.
Many people try cutting back on calories by switching from sugarSome sugars are found naturally in foods, such as fruits, veggies

amounts are needed to create the same level of sweetness.
Although sugar itself isn’t bad, sugar has a bad reputation that’s
mostly deserved because we consume too much of it. It’s now in
just about every food we eat. Experts agree that Americans eat and
drink way too much sugar and it’s contribution to the obesity epidemic. Much of the sugar we eat isn’t found naturally in food but is added during processing or preparation.
Many people have debated the safety of artificial sweeteners for
decades. To date, researchers have found no clear evidence that
any artificial sweeteners approved for use in the U.S. cause cancer
or other serious health problems in humans.
But can they help with weight loss? Scientific evidence is mixed.
