While this brunch is advertised as taking place at their Flow Restaurant, it extends far beyond the confines of an ordinary hotel all-day dining restaurant buffet. This is, in fact, a finely crafted and creative food and beverage journey that sees an amalgamation of all the fantastic lounging and dining outlets within the hotel. Starting at 11am and winding up at 4pm, guests are invited to the ThreeSixty HOLIDAY TIME’S ONLINE bar, usually a jazz lounge by night, on the 32nd floor of the hotel, accessed via the executive lounge reception on the 31st floor. A spiral staircase allows you to emerge at a stunning, panoramic vista over the river and city. The view is inspiring and further enhanced by the pre-brunch drinks and nibbles on offer, to set the mood for the epic binge eating over the course of the afternoon. There is a selection of cocktails, mocktails and juices, as well as bite-size appetizers until midday, when staff then invite you to make your way, at your leisure, down to the ground floor to Flow. Flow is an expansive riverside restaurant, with both indoor and outdoor dining, which is absolutely sublime for this time of year – cool breezes and sunshine make for the perfect bonus. Five display kitchens span the globe throughout Asia and the Mediterranean, regularly bringing you a whole host of taste and flavour sensations. On any other given day, breakfast buffets are just 770Baht net, lunches 1,000Baht net and dinners are at 1,800Baht net, with children from 6 to 12 years old always dining at half price. CHRIS LOMBARDI T hough no actual glowing embers or flaming yuletide logs are in evidence upon entering the Fireplace Grill at the InterContinental Bangkok on Phloen Chit Rd., there is an undeniable warmth that pervades the simple, uncluttered and elegantly understated dining room. Softly earth toned fabrics and natural wood surfaces play off gleaming steel countertops, grills and copper cooking pots housed neatly within the centrally placed, open-plan cooking plaza. Executive Chef Leslie Stronach, whose decades under the toque has spanned no less than six continents, upholds the institution-class restaurant’s nearly 50-year legacy of culinary excellence with both creative flair and reverence for tradition. His menu strikes a perfect balance of rich, hearty succulence and health-conscious garden freshness that is satisfying in the extreme. Apropos the festive season, our meal opened with that holiday favourite, Roast Turkey with Cranberry Sauce and Stuffing. The duo of uniformly thick, centre-sliced breasts were neatly tiered atop a bed of herbed mixed fowl “Grandma’s” style stuffing. Even the much-maligned Brussels Sprout put in a tender-textured, buttery-braised appearance alongside roasted Kipfler potatoes imported from France, while a pair of miniature gravy boats decanted an irresistible Shallot Crème Bread Sauce and refreshingly light Giblet Jus. Next to arrive was the Pan roasted Scallop and Alaskan King Crab Thermidor with Emmenthal and Parmesan Hollandaise. The generously sized scallop was lightly browned and offered a firm bite, while the crab’s gratinated cheese topping provided a creamy rich, earthy tasting accompaniment. Chef Leslie’s knack for creating innovative garnishes with a life of their own was showcased in this dish with the inclusion of a coil of egg- and flour-less Prawn Udon noodle made entirely of emulsified prawn, along with a delightful and aptly named Potato “Confetti” consisting of crispy, impossibly miniscule and perfectly diced cubes of those premium imported Kipler spuds. It was shellfish déjà vu time as a plate Pan Fried Scallops and Foie Gras Nuggets with XO Jus was presented. As with the previous dish, the scallops were gently browned outside, with a tender but firm bite. And carving the Foie Gras into small “nuggets” is a smart way to serve the goose liver delicacy: The crunchily-seared outer skin was a nice prelude to the soft, smooth, pâté-like consistency of the meat within, allowing these bite sized charms to be enjoyed in small, texturally diametric nibbles that are intensely flavourful without being overpowering. The farm-fresh pea tendril garnish (including the pods and seeds) provided a leafy, verdant appearance and were a pleasantly crispy complement to the dish’s more densely-textured elements. The tantalising procession of seafood continued with a Pan Roasted Snow Fish with Scallop Sausage, served on a gorgeous four sided dinner plate. The firm textured, creamy-white block of snow fish was moist and flavourful, easily separating into succulent layers at the slightest touch of the fork, while the scallop sausage offered a smooth texture and subtle, unassuming taste. We pointed out earlier Chef Leslie’s penchant for above-standard dinner plate ambience, and here he pulls out all the stops by creating a masterfully conceived and executed garnishing that was as much of a delight to behold as it was to consume. To enhance his Snow Fish, the Scotland-born kitchen Meister fashioned a daring Indo-Italian hybrid in the form of a tongue dazzling Saffron infused Vegetable Minestrone sauce that would be perfectly at home served in Delhi or Rome. Also populating the plate were a suite of miniature vegetables, artfully arranged in such a way as to suggest a tiny haute cuisine village of potato cube houses, needle-like carrot tip (imported from France) church steeples, broccoli flower shrubberies and pearl-sized, caviar tomato (imported from Holland) civic artworks. But the evening’s highlight was yet to come—the Duet of Tajima Wagyu Grilled Sirloin (Marbling: 7+) and 24-hour Braised Short Rib (Marbling: 6+) with Red Wine Jus amply demonstrated that the Fireplace Grill’s specialised grilling techniques do proper justice to these premium Australian-grown cuts of beef. The hearty, exceedingly tender slice of short rib, presented on a bed of silky smooth garlic’d potato purée, possessed a flavour born of pampered, carefully-fed livestock. A steak knife would have been overkill, as the expertly cooked beef surrendered without a fight to the blunt edge of our fork. The short rib was topped with five strips of Tajima Wagyu Sirloin, cooked to medium rare, char-crusted perfection. GARY BOYLE amed explorer Sir Edmund Hillary racked up a fair amount of frequent flyer miles in his life of adventuring. He was the first man to stand atop Mount Everest, and the first to score the hat-trick of doing Everest and both the North and South Poles. His 1953 expedition to conquer the world’s highest mountain was done wearing just a thin cotton and nylon jacket and carrying a scant 20 kilograms of supplies. Judging by the arrivals hall at its airport, the average visitor to Chiang Mai is better prepared than Hillary. These brave weekend adventurers steel themselves against the cold with heavy jackets and an array of wooly hats as they drag their allowance-busting amounts of luggage out to the taxi stand. These scenes suggest the plane has landed inside the Arctic Circle, rather than a city a couple of degrees colder than the one they just left. Sir Hillary was also a pioneer of another adventure activity. On reaching the Everest summit, Hillary and his fellow climber Tenzing Norgay paused to take a couple of photos, thereby inventing the selfie. Tragically, Hillary failed to upload them to Facebook or Instagram, and died never knowing how many likes he would have got. Spoiler: it’s not that cold in Chiang Mai. The daytime sunshine still tries to melt the tarmac but the mornings and evenings are very pleasant indeed. A scarf or sweater is a good idea for your nightly stroll from the Night Bazaar to the luxury of the Shangri-La Hotel Chiang Mai. While the nearby night bazaar is still a tourist magnet, it pays to explore the city before retiring to the luxury of your room. Two wheels are a better idea than four, so you can zip along the lanes of the old city or ride the road that zigzags up the mountain to Wat Phra That Doi Suthep. These are great ideas, and that’s why every other tourist will be doing it the same day that you are. Luckily, the new generation of Chiang Mai citizens have decided to transform the city into their own hip and laid back town filled with lazy alternatives to a hard day’s tourism. If Chiang Mai didn’t invent lazing around in coffeeshops and taking selfies then it certainly leads the field. It seems that every soi has a little indie barista perfecting their latte art, and customers photographing their coffee rather than drinking it. Ristr8to in Nimmanhaemin is packed throughout the day, but a good tip is to head through the old Wat Umong neighbourhood to a new place opposite Wat Rampeung. Baan Kang Wat is a cool collection of coffee, food, and artsy little shops in a well-designed area with super mountain views. Later in the day Think Park, on the corner of Nimmanhaemin and Huay Kaew roads, boasts a crafty chunk of artisanal shops, bars and burger vans. Or you could just laze around your resort. Younger sister to its famed Bangkok sibling, the northern Shangri-La Hotel has that Lanna-luxe style, from the ochre and reds of the lobby to the greenery of the expansive gardens. The hotel has four dining options, such as the Chinese cuisine of Shang Garden whose bar has a sensuous den-like feel, or the poolside treats of Dhala. Their Lobby Lounge is the ideal spot for an afternoon tea or for Dad to sneak away to watch the Premiere League games in the evening. The hotel’s big draw this season, however, is the buffet at its Kad Kafé. This grand teak-lined space hosts what it calls “culinary theatre” daily, but Friday is when the seafood appears in abundance. You can kick off your meal with a seafood chowder, but the more intrepid diners will head for the base camp of the central ice mountain. The summit of ice rises from its base of mussels and through the foothills of giant prawns. Visible at the peak is an avalanche of crabs which can be airlifted directly to your plate or resuscitated on the outdoor barbecue.
