President’s Message
January 2015
Happy New Year to all our members, staff and friends! As your New President, it is an honour to represent you
and lead this accomplished Board of Directors into the 2015 year. One of the true joys of the holiday season is
the opportunity to thank you for another wonderful year and to wish you the very best for the New Year.
We are grateful to all of our members who shared this special time with us and booked their holiday celebrations with family, friends and colleagues at the Club this year. As the busiest time of the year, we wish to
acknowledge and thank our General Manager, Jennifer Ralston and her dedicated team for their hard work, passion and contribution to the making these holidays a successful and memorable time for all.
I would also like to welcome your new Board of Directors whose expertise and commitment to the Club will
be invaluable over the next year. By introduction, your new Board consists of Don Little (Vice President, Treasurer), Judy Mellor (Secretary), Matthew Baird, Rod Godard, David Moncur (Past President), Bradley Brazier,
Reiner Neuman and newly-appointed past Board members, Michael Robinson, William Wright (Past Presidents).
As we forge ahead, 2015 promises to be an exciting year for the Club. As many of you are aware, your Board
of Directors have been working diligently on the new plans for the Club’s location at the expiry of our lease on
November 30, 2015. This year marks an opportunity to be a part of defining the future home of the Club, which
last occurred in 1987 after departing the Bartlett Building. This year, the Club once again faced the divergent
options of implementing substantial renovations to our existing site, or relocation to a new site.
Further to our Annual General Meeting, the Board of Directors has scheduled a Special Meeting of the Membership to consider and approve the recommendation of the Board of Directors for a site and financing strategy
in 2016 and beyond. The Special Meeting will be held on Saturday January 17, 2015 at 11:30 a.m. (Eastern
Standard Time) at the WISER’S RECEPTION CENTRE (Hiram Walker Facility), at 2072 Riverside Drive
East, Windsor, Ontario. This meeting is critically important to the future of the Club and we require everyone’s
participation in person or by proxy on this day. Kindly RSVP your attendance or submit your proxy to the General Manager as soon as possible. If you have any questions, please do not hesitate to contact Jennifer, myself
or any member of your Board of Directors.
With the start of the year come new and exciting events at the Club including our participation in the Winter
Bites Restaurant Week from Thursday January 15 through the 19th and the premier Whiskey Tasting on January 21st. Also, let us plan your next event for friends, family, colleagues and clients…with over 100 years of
planning special events for our members, we have lots of ideas to share and will ensure that we take care of
every detail for you.

2015 is going to be both and exciting and challenging year
for our Club. “Exciting challenges” pretty much sums up the
everyday existence of an Executive Chef! The culinary field
is an exciting combination of arts and science, and being a
chef allows me to exercise my mind, and challenge myself,
both creatively and academically. For my Chef’s Corner
then, I thought I’d start the New Year with something completely different: some kitchen science. Specifically, let’s
talk fish.

A fresh fish smells quite different from one that is not so fresh; organic chemistry is to blame for that distinct “rotten fish” smell. The natural process of decay
begins when a fish dies: Bacterial enzymes attack the flesh of the fish, and this
triggers an oxidation reduction reaction. The flesh of the fish contains a
substance called trimethylamine oxide (TMAO), which is broken down by
decomposition, producing two amines: trimethylamine and dimethylamine. The
mixing of these two amines is what creates that characteristic fishy smell. In
fact, it is the presence of trimethylamine that is used as an indicator of how
fresh a fish is.
Happily, some basic organic chemistry will also rescue you from a smelly fish!
If you need to remove the fishy smell, either lemon juice, vinegar or baking
soda can assist you.
Using lemon, vinegar, or baking soda will reduce the smell of the mixing
amines: Amines are alkaline based and lemon juice (or vinegar, or baking
soda) is acidic in nature; mixing the two neutralizes the effect of each, and this
reduces the distinctive smell of reacting amines. This is why lemon is added to
fish preparations: to remove the strong smell of fish.
