stir it up! 365 reasons to celebrate

STIR IT UP!
by Marialisa Calta
Just when you thought
the holidays were over,
along comes World Nutella
Day (Feb. 5). It is preceded
by National Homemade
Soup Day and followed by
National Frozen Yogurt Day.
New Year’s resolutions
aside, you’ve got a lot of eating ahead of you. That’s according to Steff Deschenes,
author of “Eat the Year,” a
compilation of food holidays.
If you’re a fan of nachos,
you’re in luck: On Nov. 6 you
can celebrate National Nachos Day. Is April 19 your
birthday? Garlic is in order
— it’s National Garlic Day.
Unfortunately, you already
missed National Tempura
Day (Jan. 7), but there’s always next year.
Owing to the efforts of
food companies, health and
consumer
organizations,
producer associations, retail
outlets, citizen petitions and
bloggers, at least 365 food
and beverages have been
given their day in the spotlight. Actually, way more
than 365 foods, as many
days are dedicated to two or
more. April 19, for example,
is National Rice Ball Day
and National Amaretto Day.
Deschenes’ book is chockfull of food factoids: Did you
know that chef George
Crum, who worked in a fancy restaurant in Saratoga
Springs, New York, in 1853,
responded to a customer’s
complaint that the potatoes
were soggy by shaving and
frying spuds and sending
back a plate of what we now
would call potato chips?
Chef Crum apparently
meant this as a dramatic, inyour-face retort, but the
chips were so well received
he kept them on the menu
as “Saratoga Chips.” This info will come in handy on
March 14, National Potato
Chip Day.
Or how about the fact
that ketchup started as a
condiment of pickled spiced
fish entrails and soy sauce
called “koe-cheup,” intro-
365 REASONS TO CELEBRATE
duced in southern China in
300 B.C. and spread to the
rest of the world by British
traders? Save that gem for
June 5, National Ketchup
Day.
Deschenes includes some
recipes, but not one for every
“holiday.” I was especially
distraught that she offered
none for the upcoming National Blueberry Pancake
Day on Jan. 28, a day I personally plan to celebrate in
style. I offer my own recipe,
which includes pecans, and
could also be used to celebrate National Pecan Day
on March 25.
Note: Blueberry Pancake
Day is not to be confused
with the days celebrating
blueberry pie (July 11), blueberry popovers (March 10),
blueberry cheesecake (May
26), blueberry muffins (July
11) or blueberry popsicles
(Sept. 2), all of which could
presumably be eaten during
July, which is National
Blueberry Month.
BLUEBERRY CORNMEAL PANCAKES
Yield: 16 pancakes
2 cups buttermilk
1/4 cup butter, melted and
slightly cooled
3 tablespoons pure maple
syrup or honey
2 large eggs
1 1/4 cup cornmeal, preferably stone ground
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 to 3 teaspoons finely
chopped orange zest
1/4 cup finely chopped
pecans
Coconut oil or canola oil for
cooking
2 cups blueberries, fresh or
frozen (see note)
Pure maple syrup, for serving
Preheat the oven to 200
degrees.
Pour the buttermilk into
a large bowl or quart measuring cup and whisk in the
butter and the maple syrup.
Separate the eggs and whisk
in the yolks. In a separate
bowl, whip the egg whites

DEAR WORN OUT:
Stress and fatigue are not
good bedfellows, as you and
your
husband
are
experiencing. As challenging
as this is, you two need to
have a frank conversation
about your lives. Choose a
time when you can be alone
and not on a tight schedule
— probably on the weekend.
Candidly tell your husband
how tired you are and that
you aren’t sure how you can
keep up with everything.
Discuss whether you should
look for other work where
you might be able to have
one job that earns enough
money to help your family.
Ask your husband if he
would be willing to work
with you to make a new plan
for
how
household
responsibilities are handled.
Perhaps if he help could help

Celebrate National Blueberry Pancake Day on Jan. 28
with these cornmeal-pecan-blueberry pancakes.
Marialisa Calta
until stiff peaks form. Set
aside. (This step can be
skipped, but whipped egg
whites make for fluffier pancakes).
In a large bowl, whisk together the cornmeal, flour,
baking soda, salt and zest.
Whisk in the buttermilk
mixture until just combined.
Stir in the pecans until well
distributed. Using a rubber
spatula, fold in the egg
whites until well incorporated.
Pour about a tablespoon
of oil into a well-seasoned
cast-iron skillet or a nonstick skillet and set over
medium heat until a few
drops of water sprinkled in
the skillet sizzle. Scoop 1/4
cup of batter and pour into
the pan (the batter will be
thick). Sprinkle about 2 tablespoons of blueberries over
the top. Do not crowd the
pan. It is better to use two
smaller skillets to make two
pancakes at a time than to
crowd one skillet.
Cook on one side until
bubbles begin to form on top
and the other side is golden,
about 2 minutes. Flip and
cook on the blueberry side
until done, about 2 more
minutes. Resist the urge to
press down on the pancakes
or to flip them more than
once.
Remove from skillet and
place on a cookie sheet in
the preheated oven. Continue with remaining batter
until none is left, adding a
bit of oil and adjusting the
heat as needed. Gently heat
the maple syrup and serve
pancakes and syrup immediately.
Note: If using frozen
blueberries, thaw them, or
look for small “wild” blueberries, which will cook
quicker and help prevent
raw spots in the pancake.

SENSE & SENSITIVITY STRESS OF WORK DAMPENS THE MOOD
by Harriette Cole
DEAR HARRIETTE: I
work two jobs and really
long hours. I leave around 5
in
the
morning
and
sometimes don’t get home
until after 8 at night. I don’t
complain
about
my
schedule. When I get home, I
help my kids with homework
and get them to bed before
it’s too late. Then I do some
housework to try to keep
things in order. This is what
it takes right now to help
support my family.
The problem comes at the
end of the day. My husband
works one job. He works
hard, but doesn’t have the
hours like me. So when I’m
crashing at night, he
consistently wants to get
busy. I don’t mean to be rude
or not a good wife, but I
hardly ever have enough
energy. How can I keep my
marriage strong and keep up

more with childcare and
home care, you will have less
to do and a tiny bit more
relaxation time. In turn, you
may have a bit more energy.
Tell him that you do not
mean to deny him, but you
often don’t have the energy.
Suggest making time for
intimacy on the weekend, or
pick another time that you
think you might be able to
commit to on a regular basis.
DEAR HARRIETTE: It
seems like all of my mother’s
friends are old and frail. I
know we should be grateful
that
they
are
alive,
considering they are in their
late 80s, but it’s really hard
to handle being on what
feels like alarm mode all the
time. Every time I hear the
phone ring, I worry that it’s
a report of another friend
dying. How can I relax and
enjoy my mom and her
friends rather than worrying
myself sick all the time? —
On the Edge, WinstonSalem, North Carolina
DEAR ON THE EDGE:
Growing old is a doubleedged sword. Obviously, you
treasure having your mother
and her friends, but the
downside is that older
people are often fragile. It is
important for you to choose
to keep a positive attitude.
Rather than answering the
phone with fear or dread,
assume the call will be good.
Do one better and begin a
phone tree with your mother
and her friends. Agree to call
each other regularly so that
the calls will not just be
emergencies.
Similarly,
choose to spend time with
your mom as frequently as
possible. Savor the time you
have. This may help to curb
your worries about the
future.
