Encore University is a place where your “Adventures in Lifelong Learning” begin. So, come along and
experience the adventure.
Encore offers a diverse program of classes, lectures, speakers, travel and seminars designed to
engage persons “50 and better” through intellectual stimulation, fun experiences, fellowship and
personal enrichment. We know that those “50 and better” want to continue learning, remain active,
and make a difference in the community.
The mission of Encore University is to build new relationships, foster a
sense of community, study scripture, participate in the “Adventures in
Lifelong Learning,” and to experience enriched lives and faith via action.

Dear Lifelong Learners,
Welcome to another great term at Encore University! We are glad you are here - so come
along and experience “Adventures in Lifelong Learning” with us. Whether you are a returning
student or new to EU, there’s something for everyone. Did you notice our new and exciting Lecture
Series with Professors from the Emeritus College at ASU?
Thank you to everyone who continues to give their time and expertise to make Encore
University happen. As a non-profit, Encore relies on registration fees, course fees, volunteerism, and
financial gifts to produce and sustain the stimulating, informative, and fun curriculum offerings.
There are many ways in which we can continue to grow…but we need your help! Whether it
is your gift of time by volunteering in the office or café, joining a committee, or by becoming a
classroom ambassador – we have a place for you. We welcome financial gifts to help with
administrative costs, marketing, scholarships, and capital needs like laptops and projectors.

Registration, Fees, and Policies
Registration required
Registration: You can register in one of two ways.
1. Register online at www.encoreuniv.org and pay by credit card. We strongly encourage you to register by this method.
Step-by step instructions for online registration can be found on page 6.
2. Register by completing the registration form on page 23 and send it to Encore University at Valley Presbyterian Church
along with your check. The address is: 6947 E. McDonald Drive, Paradise Valley, AZ 85253.
3. Make check payable to Valley Presbyterian Church.
Course Fees:
1. The Registration Fee is $25.
2. The Course Fee is $35 per course which includes all five (5) weeks of the course. If a course consists of 4-5 individual
lectures or subject matters, you may pay $20 for one lecture. If you attend two or more lectures, the fee will be $35
which is the overall course fee.
3. Study sessions and/or special guest speakers will publicize the fees separately.
Travel:
All travel and trips will publicize the fees separately. Each trip will have separate cancelation policies are noted within
the travel information.
Supplies:
Supplies and text fees will be paid separately and are noted in the course descriptions.
Enrollment Minimum and Maximum:
Some courses have a minimum or maximum enrollment which is noted in the course description. If a course enrollment
does not meet the minimum, you will be notified a few days before the course is scheduled to begin. If the enrollment
is at the maximum, you may elect to be placed on a waiting list.
Withdrawals:
Withdrawals before the first day of class will be refunded by check.
Guests:
You may bring one guest who is not a current Encore University student to one session of a course that consists of three
or more sessions and has not reached its maximum. Attendance for more than one session requires registration and full
payment. Please contact the office to verify that the course has space and to provide the guest’s name.
Scholarships:
Encore University has a scholarship fund for individuals who may need financial assistance to participate in our programs.

Aydin Aygun was born and raised near the River Euphrates in Eastern Turkey. He led the EU Turkey
Travel Group in October 2014. A graduate of the Turkish Military Academy, he earned a BA in Business
Administration and Leadership. As a professionally trained and licensed guide by the Turkish Ministry of
Culture and Tourism, Aydin has been leading tours since 1994. Aydin has an in-depth understanding of
the Matrix of Early Asia Minor.

“The Northern Lights: Myths and Science”
The Northern Lights-Aurora Borealis is an amazing and colorful natural phenomenon. Many
myths have been spun about its origin, and only lately have we gained a scientific
understanding of its dynamic appearance. This talk will show through photos and videos how
our explanations for the “light show” have changed over time.
Instructor: Dr. Per Aannestad, Professor Emeritus ASU
Per A. Aannestad, Ph.D., received his undergraduate degree in astronomy from the University of Oslo, Norway,
and his graduate degrees from the University of California, Berkeley. His postdoctoral years from 1971-1975
were spent first at the Goddard Institute for Space Studies in New York and later at Steward Observatory,
University of Arizona, studying the far-infrared sky via balloon observations. Since 1975, Per has been a Professor
of Physics and Astronomy at ASU, until his retirement in 2004. His research interests were the physics of the
interstellar medium, interstellar dust, and star formation. He is currently the Director of the Emeritus College
Academy for Continued Learning.

“Target Earth: Asteroids, Comets, and Near-Earth Objects”
On February 15, 2013 a meteor weighing 10,000 metric tons exploded above Chelyabinsk,
Russia, releasing more than 30 times the energy of the Hiroshima bomb, and injuring
hundreds. There are more than 10,000 asteroids and comets that can pass near earth. This
lecture will describe the various groups of objects that may pose a threat, some of the earlier
impacts, and how we might even prevent or mitigate the effects of a disastrous collision in the
future.

“Whistle Blowers as Heroes: Profiles in Courage”
whis•tle–blow•er (noun) (Merriam-Webster) : a person who tells police, reporters, etc.,
about something (such as a crime) that has been kept secret.
Who blew the whistle on the facts behind the “O” ring seal catastrophe following the
hallenger explosion? Hear about the whistle blower who exposed the truth about the
contaminated drinking water (TCE) just north of the Indian Bend Wash which is now a Superfund Site. Based on over 100 interviews from across America, Dr. Ron Hardert will give his
remarks and findings on the personal characteristics of these Whistle Blowers. Come hear
many of the fascinating details surrounding these Whistle Blower Heroes.
Instructor: Dr. Ronald Hardert, Professor Emeritus ASU
Ronald Hardert, Ph.D. received his undergraduate and Master degree at the University of Cincinnati and his
Ph.D. in Sociology at Indiana University. Post graduate, Ron taught Sociology on all levels at ASU for 34 years
before retiring to Carefree, AZ. He has published 10 books and some 25 articles.

“Modern Cosmology: The Big Bang and All That”
Constantly revised to contain the most recent information on this developing topic, ‘Modern
Cosmology”, this lecture will be centered on the Big Bang model of the origin of the universe,
including observational evidence, the meanings of dark energy and matter, and current
results on the Inflation Model.
Instructor: Dr. Richard Jacob, Professor Emeritus ASU, Barrett Emeritus Fellow
Richard Jacob, Ph.D., taught physics at all levels at ASU for almost 40 years before retiring. He served as chair of
the department of physics and astronomy and is the founding Dean of the Emeritus College at ASU. His teaching
areas emphasized quantum physics, relativity, electrodynamics, and mathematical physics, and his research is in
theoretical elementary particle physics. Other interests of Dr. Jacob include playing in the Arizona Wind
Symphony and in the big band, Sonoran Swing.

Do you believe little that is worthwhile grows in the desert, that you don’t
have enough space, time, or money to make gardening worthwhile in the
”Arizona Wilderness?” Master Gardener, Sam Kelsall, will expose the truth
about desert gardening in this hands-on class that will teach you to grow
bountiful edibles, but most of all--- your own confidence! All it takes is a 2x2
foot area. You’ll be introduced to square-foot gardening, soil preparation,
water conservation, weed control, and how to manage the Phoenix sun.
Instructor: Sam Kelsall
Sam Kelsall is a University of Arizona Master Gardener. He has been teaching others to garden in the Arizona
environment for more than 20 years producing good, consistent results. Yes, he can teach you, too.

This course is an introduction to bridge for the beginner and a re-start for
those with a little knowledge. The instruction will include the mechanics of
the game including choosing a contract, opening the bidding, responding to a
partner, playing in a suit, playing no trump, and counting points.

Madelyn is a certified bridge teacher with ACBL and ABTA credentials for teaching all levels of bridge. She is
knowledgeable about ACBLSCORE and has been teaching bridge for 30 years. Since July 2013, Madeline has
worked for the Doty Bridge Club, directing and developing programs with beginning students in a supervised
play teaching and learning environment. She has achieved the rank of Gold Life Master, with over 3,700
master points and success in more than a dozen Regionals and Sectionals.

Mah Jongg means sparrow, and the tiles are decorated with Chinese characters and symbols. This

it. Pat welcomes at all levels of experience and those who want to improve their
overall skills but often need help to move to the next level.

Instructor: Pat Serie
Pat painted part time throughout his business career in Fortune 500 companies, and exhibited at nearby shows
and galleries. His work often reflected the green woods of rural New Hampshire and the richness of the
mountains. In 1997, his family relocated to the desert Southwest, and many of his works now center around
images of the Sonoran Desert of Arizona. Pat studied art at Manchester Institute of Art and the Previte Gallery
(both in New Hampshire) and the Scottsdale Artists School. He was juried into the Scottsdale Celebration of Art.

This class is for all levels of ability. All that is needed is desire and courage! Courage to
leave your fears at the door and come in and enjoy the wonderful process of
sculpture. We will be sculpting a three dimensional portrait from a flat, twodimensional image. You will collect a variety of pictures then choose your subject from
photographs which can come from your own collection or from magazines, books,
drawings you find interesting. Bring your collection to the class so that you can make
the best choice for your masterpiece.

Instructor: Susan Henningsen
Susan Henningsen received a BFA Degree from ASU. She taught art for 16 years in public schools and continues
to teach portrait, figurative and base-relief sculpture at Scottsdale Artist School. Her best-known work is the
larger-than-life bronze portrait sculpture of Sandra Day O’Connor, U.S. Supreme Court Justice, installed in the
Sandra Day O’Connor U.S. Courthouse in Phoenix.

Instructor: Rodney Cobb
Rodney Cobb, a 20 year veteran artist, has expertise in drawing, painting, anatomy, design, color, plein air
painting, and portrait painting. He is associated with International Plein Air Painters and Oil Painters of America.
Rodney received a Bachelor of Science in Urban Planning from Michigan State University and a Juris Doctorate
Degree from Thomas M. Cooley Law School in Lansing, Michigan. Most recently, Rodney has written his first
book on the elements of drawing and painting, Best Daily Art Practices: Drawing and Painting.

Survey of Art History 101 is the foundation, broad overview and
acquaintance with the history of painting, sculpture, and architecture
from its beginnings in prehistoric times to the end of the Middle Ages. We
shall study works of art as expressions of the needs, ideals, and
aspirations of the particular society in which they were created; a
historical point of view.
This Art Survey course is the groundwork and footing for further developed art history study offered in
the Fall Term 2016.

Instructor: Anne Connor
Anne “adores teaching” and is excited to teach Art History at Encore University. She was raised and educated in
Brussels, Belgium before coming to the Valley in 1990. In 1997 Anne founded the Friends of European Art at the
Phoenix Art Museum where she served as its first president, contributed several articles in the catalog for the
“Copper as Canvas” exhibit co-sponsored by the Museum, was a member of the Phoenix Art Museum’s
Collection Committee and participated in the training of apprentice docents. In 2003, together with Regent
Professor Caio Pagano of ASU, Anne started the “Evenings with Art and Music,” program highlighting similar
currents in both disciplines. These Evenings have contributed significant financial support to piano students at
Arizona State University. Anne taught Humanities and survey courses of Art History at Scottsdale Community
College and Glendale Community College. She has also taught upper division courses in Northern and Italian
Renaissance and Baroque Art at ASU for 5 years and is currently teaching at Scottsdale Artist School. Anne gives
regular lectures at the Phoenix Art Museum, Scottsdale Community College and special interest groups in the
Valley. She holds a Master Degree in Art History from ASU.

Whenever people interact, the way in which they exchange information and
influence each other is through interpersonal communication. Often
communication goes well. But when it does not, our relationships at home or
in the world at large can be severely impaired. Being human and
imperfect, all of us experience communication challenges. This is the rule not
the exception.
This five-session course will focus on core individual and group communication skills that have been
proven to help make challenging interactions go better. Participants will have the opportunity to
learn and practice these skills and to explore actual communications challenges from their daily
lives. The goal of the course: that every participant will improve his or her daily interactions with
others. Dr. Gullen will lead a class on how to talk with your doctor (and the best approach to
understanding all those test results) for Encore University.

A graduate of Princeton University, Dr. David J. Gullen received his medical degree from the University of
Arizona and a master’s degree in microbiology and immunology from ASU. Dr. Gullen joined the Division of
Community Internal Medicine at Mayo Clinic Arizona in 1997 and is currently Chair of the Board of Directors of
the Flinn Foundation, a Master of the American College of Physicians, member of the Board of Directors of the
Translational Genomics Institute and Co-director of the physician-patient communication skills curriculum at
Mayo, where he co-founded a program in communication skills training.

arts, crafts and fashion in the southwest, a cachet that continues today in the area’s galleries,
museums and events. Learn more about Scottsdale’s first century of art from community historian
and author Joan Fudala.

Joan Fudala is a full-time community historian, consultant, researcher and author, specializing in the history
of the greater Scottsdale area. She is the author of eight books, including Historic Scottsdale: A Life from the

frequently speaks to civic groups about local history, and has a range of business, non-profit and government
clients for whom she does historical research and writing projects.

A drifter from Missouri, George W. P. Hunt managed to win seven terms as
governor of Arizona, including the first one starting in 1912. This highly
colorful politician led the progressive efforts to open the political system to the
people, reign in large corporations, protect labor, bring about penal
reform and led the battle to protect Arizona’s water from California.

Focus your attention on the history of some of the Valley’s oldest canals, starting with a brief
background on the Hohokam system moving into canals constructed as the Valley was settled during
the late 1800’s and beyond. Included in the discussion will be a short discussion of some of the
trails/highlights available on the canals today.

Leah Harrison is a Historical Analyst with Salt River Project’s Research Archives. A native Phoenician and
former secondary history educator, Leah earned her Master’s Degree in Public History and Scholarly Publishing
from Arizona State University. As a historian with SRP, she studies the history of water and power in the
Valley.

position as Spanish teacher at Paradise Valley High School and then taught Spanish for 14 years in Scottsdale’s
Life and Leisure program.

Aydin Aygun was born and raised near the River
Euphrates in Eastern Turkey. A graduate of the Turkish
Military Academy, he earned a BA in Business
Administration and Leadership. As a professionally trained
and licensed guide by the Turkish Ministry of Culture and
Tourism, Aydin has been leading tours since 1994. Aydin
has an in-depth understanding of the Matrix of Early Asia
Minor.
Turkey is a crucial corner on the stage of Western
Civilization. The peoples who lived in and crossed through
Turkey left records of their lives spanning the ages from
Noah to Paul contributing to the Social, Cultural and
Historical Matrix of Early Asia Minor.
