We added chopped walnuts for a new variation on
the classic oatmeal raisin cookie.

INGREDIENTS

/2 cup firmly packed brown sugar

/2 cup granulated sugar
1 egg slightly beaten
1 teaspoon vanilla extract

teaspoon salt
teaspoon cinnamon (optional)
cups McCann’s Quick
Cooking Irish Oatmeal
cup raisins
cup chopped walnuts
PREPARATION
1. Preheat oven to 350°.
2. In a large bowl, cream the margarine and sugars. Add egg and
vanilla extract.
3. Combine flour, baking soda, salt and cinnamon. Add to margarine
mixture. Mix well.
4. Stir in McCann’s Quick Cooking Irish Oatmeal, raisins and walnuts.
5. Drop rounded teaspoons of batter on an ungreased cookie sheet.
6. Bake for 12-15 minutes at 350°. Cool for 1 minute before removing
to wire cooling rack. Makes approx. 36 cookies
CHEWY SQUARES
INGREDIENTS
2 cups McCann’s Quick Cooking Irish Oatmeal
1 cup flour
1 cup margarine
1 egg (beaten)
/ cup brown sugar
1 cup raisins
1 cup marshmallow fluff

/ cup dry roasted peanuts
1 teaspoon cinnamon

PREPARATION
1. Preheat oven to 350°F.
2. Heat margarine, sugar and fluff over a low heat, stirring constantly
until smooth.
3. Remove from heat. Stir in McCann’s Quick Cooking Irish Oatmeal,
next beat in egg. Add flour, raisins, peanuts and cinnamon and
combine well. Spread in a 9” square baking pan.
4. Bake for 15 minutes. Allow to cool in pan. Cut into squares.
Makes 12 bars

INGREDIENTS
1 cup semi-sweet chocolate chips

16 large marshmallows

/ teaspoon vanilla extract
2 cups McCann’s Quick Cooking Irish Oatmeal
1 cup flaked coconut
PREPARATION
1. Preheat oven to 350°.
2. Heat chocolate chips, margarine, and marshmallows in a saucepan
over a low heat, stirring continuously, until smooth.
3. Remove from heat. Mix in the vanilla, McCann’s Quick Cooking Irish
Oatmeal and coconut. Spread into an 8” square baking pan. Bake for
about 15 minutes.
4. Remove from oven and cool in pan. Cut into slices.
Makes 12 slices

INGREDIENTS

/ cup melted butter

/ cup chopped, dried cherries
1 cup all purpose flour

/ cup granulated sugar

1 cup McCann’s Quick
1 teaspoon vanilla extract
Cooking Irish Oatmeal

/ cup melted white chocolate (for decoration)

PREPARATION
1. Preheat oven to 350 degrees. Grease cookie sheets.
2. Melt the butter in a small saucepan over low heat.
3. In a large bowl combine flour, sugar and McCann’s Quick Cooking
Irish Oatmeal. Add nuts, cherries and chocolate. Mix well.
4. Add melted butter, egg and vanilla extract. Combine together well.
Drop heaping teaspoons onto prepared cookie sheets about 2’
apart. Bake 12-15 minutes or until lightly browned.
5. Cool cookies on wire rack. To decorate, drizzle or pipe melted white
chocolate on top of each cookie.
Makes approx. 2 dozen cookies
