1 1/2 cups sugar (can use 1-1/4 cup for a less sweeter taste ,or can
use 3/4 cup Splenda)
2 1/2 teaspoons baking powder
1 teaspoon salt

This recipe goes back over 20 years, I like the
simplicity of this recipe and for a one bowl
cupcake they are pretty darn good, 1-1/2
teaspoons almond extract may be used in place of
the vanilla, using butter in place of shortening will
alter the texture it is best to only use shortening --if you don't have paper liners grease the tins
generously or see my recipe#78579

Set oven to 350 degrees F.

In a large bowl, mix together the flour with sugar, baking
powder and salt until combined.

Add in the shortening cream or milk, vanilla and eggs; beat on
medium speed of an electric mixer scraping the bowl
constantly until just blended (the batter will be thick, if desired
you may add in a few more tablespoons cream or milk).

Pour into paper-lined regular size muffin tins filling under just
three-quarters full.

Bake for 20-22 minutes or until the cupcakes test done (do not
overbake as they will be dry).

I made these last night and they are sooooo easy. I love the one
bowl thing. These are just as easy as opening up a box of mix,
yet so much better. I frosted these with your buttercream
frosting and the kids (and adults) loved them. Thank you for
such an easy cupcake recipe.

These are very good cupcakes and incredibly easy to prepare.
They rose evenly and had a good vanilla flavour. I did two
batches - one with butter and the other with vegetable oil and
they were both good. Easy cleanup and would have given 5
stars but thought they could have been just a tad moister but
maybe that was just me??? I added a couple of pictures. Thank
you.

So easy and so good! I had to make these as a base for a cake
decorating class, so when I realized too late that I had no
vanilla, I made them anyway and figured it was just for
decorating. But I tasted a cupcake before class and they are
GOOD with nothing to them! I can't believe people are
complaining that these are too bland...I think they are perfectly
sweet alone and will be even yummier with frosting.

YUM! This were light, moist, and delicious!! I used just under a
tbsp of the vanilla and added a dash of almond extract! The
definitely could have made more than 12 cupcakes. These
cupcakes are HUGE!! Great flavor and consistency! Thanks!

Just made for a charity cup-cake drive. They came out large and
fluffy and the taste was divine. Thanks for an very easy but
wonderful recipe.

I made these as written and they were a little too sweet for me.
Next time I'll add a 1/4 cup less sugar as suggested. I added
some extra half and half because the batter seemed thick. The
texture of the cupcakes was beautiful. I got 19 cupcakes plus
one tiny one.

YUMMY!!! KittenCal said "one bowl" so I went even easier and
threw EVERYTHING at the same time into a blender and hit the
mix button! I used stick margarine in place of Crisco or Butter
since there was a debate. They came out PERFEECT!!! A great
vanilla base for your favorite icing to be the star!

This was a decent vanilla cupcake with not much cleanup. I
think it had more of a corn bread consistency then a cake (I
don't know how else to describe it).
