READY OR NOT...
I talked with my brother, Bill Wilson, about his experiences with the
very recent crush. He worked his tail off crushing over 150 tons of
grapes, twelve different varietals, over a six week process (starting in
early August). The volume picked was down this year due to a heat
wave that hit us in March. The early heat wave didn't allow for proper
"berry set;" so when winds and rain came, the berries were knocked off.
Although the volume was down, the quality of the 2004 harvest should
be intense, because more energy from the vine went to less grapes. So
fewer grapes, but more intense fruit (a good thing for YOU!). I now
quote Bill:
"The word 'Crush' takes on two
meanings...'crush' is breaking the
skins of the grapes; but it also means
that when the grapes are ready to be
picked, they ARE READY whether
you are or not. So you are crushed
under the finality of the long-term
repercussions of your decisions
during that critical time period.

When crush comes, it comes fast and heavy.
It is a 'time crush' as well as a 'grape crush.'
It's an incredible sense of accomplishment to
not only bring in the grapes but to change
those beautiful grapes into premium wine that
will become the future and ultimate history of
Wilson Creek to share with you, our Extended
Family. We say that 'good wine is grown in
the vineyard.' You are starting the wine at the very beginning, in the
vineyard, and then enjoying the work of a whole year in the vineyard.
At crush, you pick the harvest, then massage, nurture, and love the
fruits of your labor for months and even years until it goes into the
bottle -- caring for it like your own children. The joy of winemaking just like parenting - comes when others (like the Wine Club) say they
'love your children.'
Crush is like a hurricane. We do not want to take lightly the recent
devastation of the hurricanes, but it does make for a relevant analogy
about the intensity of crush. Like a hurricane, crush is unpredictable.
You know it's coming, but you don't know exactly when. You can
prepare for it as much as possible; but when it hits, you have to be
flexible and think on your feet. Crisis after crisis will arise; you just
deal with each one as they come at you. There are down times. A

chance to rest. However, rest is like the eye of the hurricane.
When you are resting, you just know more is coming. The
aftermath of crush is awesome, so the constant clean-up is just
that, constant. In short, you never know exactly when it will hit
or how hard. You can be ready; but when it hits, it is all hands
on deck. If you are not ready, it will devastate you. If you are
prepared and flexible, you can ride it out and come out a survivor...
or in this case, come out with tired bodies but great wine."
A special thanks to our winemaker, Mike Calabro, our new
assistant winemaker, Benny Rodriguez, and our incredible crew
who worked long, hard hours. A special thanks to my brother,
Bill Wilson, who not only bore the pressure on his shoulders but
got involved in every part of the process... literally "hands-on"
management (but the hands are stained purple). As a family, we
are all very proud of him, especially me, his bro.

cold beer after a long day and a job well done. As Bill says,
"it takes a lot of good beer to make great wine."

MILITARY CUSTOM LABEL UPDATE
We are proud to label some of our premium wine for two Navy ships. We are making custom labels for the men and women aboard the USS
SHREVEPORT. We are also designing a label for the newest aircraft carrier the USS RONALD REAGAN (recently welcomed to San Diego).
The officers onboard these ships use these classy labels (and great wine may I add!) for their own personal use (they buy it out of pocket). The
Commanding Officer uses the custom labeled wine as gifts to dignitaries and also for formal dinners with foreign powers at ports when deployed.
It is an honor to bottle wine for the Navy as well as having our name represented around the globe.
What Goes“Good” With Wine?
"What Goes 'Good' With Wine?" is a new column where various
members of the Wilson family will take turns sharing activities,
hobbies, and items that enhance the wine-drinking experience. Be sure
to watch this article closely, as it will be sure to include fun information
and discount opportunities on topics, such as cigars, desserts, golf,
vacations, sporting events and many other things that pair nicely with
red, white, and sparkling wines. This first editorial comes from Rosie
and Gerry's son-in-law, Craig Johns, about two topics near and dear to
his heart:
"The first item dear to my heart is golf, and the second one is gourmet
cuisine. I was in the "golf business" up until about 10 years ago. I
was a PGA Apprentice and spent my time teaching golf lessons,
coordinating golf tournaments, and selling nice golf apparel for a few
private country clubs. I was introduced to many fine things during my
years in the golf business. Of course, I need to mention my wife,
Libby, as the highlight of all fine things that I was introduced to while
in the golf business. You can read her column (Ask Libby) and find out
why chardonnay goes with everything.
Since Libby and I moved to Temecula, we have become friends with
many people in both the golf and food and beverage industries. One of
the gentlemen we have become friends with is Mark Stevens. Mark is a
PGA Professional and is currently the VP of Operations of CSC golf.
CSC owns and operates two local Golf Courses that have restaurants on
their respective properties. The two golf courses are Redhawk Golf
Club and Temeku Hills Golf and Country Club. Best of all, Mark
would like to extend to our Wine Club members a discount to both
properties for golf tee times in the amount of approximately 15% off
anytime golf play with your extended family membership card from
now through the end of the year.
We would also like to announce the partnership of Wilson Creek

'The Almond Champagne Brunch.' This brunch will be held every

Size really does matter if you're trying to enhance your experience!!!
(We're talking the size of stemware, of course!) If you have an
extra ten dollars lying around, try this experiment! (Don't worry,
this is a "family" publication, so what we're suggesting is clean.)
Go buy yourself a ten-dollar bottle of red wine. Then pour some
into any old goblet and some into a proper tulip-shaped crystal
Bordeaux glass. Taste. I guarantee you'll think you're drinking two
different wines.
While we don't recommend this practice too frequently, it is
important to keep in mind that your stemware is extremely
helpful to improving your wine experience and can make even the
most unremarkable wine taste more refined. PLUS the finest wines
we send your way are all but wasted if you drink them out of coffee
mugs or, horror of all horrors, poolside plastic. The key is to get the
needed function out of your stemware without breaking the bank, so
read on for some helpful hints:
Believe it or not, the best wine glass is very plain! But no matter
what you hear, ladies and gentlemen, SIZE DOES MATTER!
In fact, the most important thing about a wine glass is its size-the bigger, the better it is for capturing the wine vapors and
funneling them to your nose. Make sure your stemware is
colorless and tulip-shaped, with a stem and a very thin lip. The
thin rim of a tulip-shaped glass allows the wine to freely flow to
your lips, so you can experience a concentration and collection of
your wine's aroma, then allows the wine to smoothly stream onto
the most sensitive areas of your tongue.
Above all, make sure the stemware you select has no tinting and is
made of none other than crystal! Crystal has a rougher surface than
glass, on a microscopic level, and helps wine release its aromas as
you drink. A thick-rimmed glass will accentuate a wine's flaws. Of
course, with crystal's porous surface, you'll need to keep it clean,
because it will absorb any kitchen smells, musty cupboard aromas,
even your dish soap. Never just take a glass from the cabinet and
pour wine into it. Just before serving, always rewash your stemware

I am quite unsure about box wine.
What are your thoughts on box wine?

A. Dear Curious,
As far as box wine goes, here are some ideas. First empty the
contents of the box. Can be used as a great drain cleaner!
1. Use the box to transport fine bottles of wine. Cut the top off and
decorate it for the appropriate occasion.
2. Makes a great piñata. Simply cut the dispenser out and fill the
box with candy. Tape it up, find a place to hang it and take a whack.
3. How about a nice disposable trash can. Cut the top off and put a
small trash bag or grocery bag inside. Handy for RV's, cars, boats or
any small area.
in very hot, sudsy water and rinse it over and over again. Polish
with a lint-free cloth, laundered without fabric softener (which
leaves an invisible film). Then stick your nose in the glass and
inhale -- you should either smell nothing or wash it again. Some
experts even recommend that new glasses be soaked for 24 hours in
vinegar and thoroughly cleaned before their first use in order to
remove surface lead residue from the manufacturer. BTW: Because
of crystal's porous surface, do not store wine in a lead glass decanter
or (as if you'd ever attempt this) drink wine left in a glass overnight.
So for the record, “Extended Family” members, here are a few
reasons for substantiating the claim that "size really does
matter!"
1. Make sure the stemware you select fits your hand. The size of
stem is important, because it should allow you to hold the
glass by the stem without warming the wine with your body
heat. (Only brandy snifters don't have stems, and that's
because you want the brandy to be warmed by your hand.)
2. A respectable arsenal of stemware includes four glasses: a
white wine glass, two types of red wine glasses (commonly
called Bordeaux and Burgundy), and a champagne flute.
a. The white wine glass is small in order to prevent the
rapid warming that would occur in a vessel with more
surface area.
b. The Bordeaux glass (which is also appropriate for other
hearty red wines, like Cabernet and Merlot) is larger,
which allows for more development of the bouquet.
c. The Burgundy glass is the largest of any stemware and
is to be used for wines such as pinot noir and other
delicate varieties that are so subtle that they need a huge
area in which to gather their aromas
d. The Champagne flute should be long, thin and tall to
allow for the proper development of bubbles.
4. Use it as a costume for Halloween (Frankenstein's head). If you
aren't dressing up, then cut the top off the box, decorate it, and use it
to put all of your treats to hand out to the kids. Have fun!
Q. Dear Libby,
My husband and I have been invited to our friends' house warming
party. My husband always complains about being hungry because they
serve extremely small portions or just a few "foofy" appetizers. What
wine should we bring as a gift?

A. Dear Growling Stomach,
It would be a great idea to have your husband eat a sandwich or a small
meal before leaving for the party. When you are at your friends' house,
your husband will be able to enjoy the fancy but few appetizers as well
as the company! For their gift, you KNOW you can't go wrong with a

2003 ESTATE CHARDONNAY
Chardonnay is the queen of white wine, and her majesty displays her
royalty with style in this 2003 Chardonnay. This exceptional
Chardonnay is fruity, yet not too dry. It is lightly oaked to give it
added complexity, yet it retains fruity flavors and provides a clean
finish. Serve it slightly chilled.
Grown in our hillside vineyard we named after our mom
(Rosemary's Vineyard), it is right behind their house on the hill.
Pretty cool to have a vineyard named after you, huh? Hey, why
not name vineyards after Wine Club members? Hmmm... Bob
White's Vineyard, Vince's Vines, Emily's Estate. Or while we're
brainstorming, how about having one vine named after you? Just
thinking out loud. Email us with even more wacky suggestions or
just email us to let us know we're being silly.
2002 MOURVÈDRE
Mourvèdre is now becoming "hip." It is referred to by Wine
Spectator as the "most fashionable" grape in California. In Spain,
where it is called "Monastrell," Mourvèdre (moo-VEH-druh) is
second in prominence only to Grenache. In Southern France,
Provence, and California it is currently enjoying a huge resurgence
of popularity. Mourvedre is a grape originally grown in the south of
France and tends to exhibit qualities relative to the area where it is
grown. It is a varietal that thrives in warm, dry climates because of
its propensity to bud and ripen much later than most other wine
grapes. We find that the sandy, well-draining soil gives a rich, dark
cherry component with good structure and mouthfeel. The aromas
are complex and rich, with ripe blackberry and jammy red fruits like
cherry and strawberry dominating. The flavors are rich cherry with
hints of chocolate and a firm acid structure. Side notes of smoky,
spicy, oak-barrel aroma with a floral note of violets give this wine a
great deal of character.

Betsy Huntingdon (member since April 2003) sent us a great
brownie recipe to enjoy with Almond Joys!!!
Here's to Good Health, Champagne and Chocolate!!
Healthy Chocolate Oatmeal Brownies
1 c rolled oats
1/2 c unsweetened cocoa powder
1 1/2 tsp baking powder
1/4 tsp salt
1 c packed brown sugar
1/2 c applesauce
1/3 c canola oil
1/2 c 1% milk
1 1/2 tsp vanilla extract
1tsp almond extract
1/2 c chopped pecans
1/2 c chocolate chips
1) Preheat the oven to 350 F and oil an 8x8 baking pan.
2) In the food processor blend the oats until powder-fine.
Transfer oat flour to large mixing bowl. Add the cocoa,
baking powder, and salt - mix together.
3) In the food processor, blend the brown sugar, applesauce,
and oil. Add the milk and extracts and pulse to blend.
Add the wet ingredients to the mixing bowl and stir. Add
the pecans and chocolate chips. Pour batter into pan.
4) Bake for 35 minutes or until toothpick comes out clean.
Let cool completely - enjoy with Almond Champagne and a
dash of Chocolate Port and maybe even a scoop of vanilla
ice cream.
Kathi Eggers (member since June 2001) submitted a delicious
Almond Champagne Punch recipe, which has been a highlight
of her family's gatherings for years! With the holidays fast
approaching, we're sure this little recipe will be a keeper for
your family gatherings too.
Lively's Champagne Punch
2 large cans frozen orange juice concentrate, thawed
1 large can frozen lemonade, thawed
2 quarts giner ale
2 bottles Wilson Creek Almond Champagne
1 pint vodka (optional)
5 pounds ice cubes
Mix all ingredients in a large punch bowl. Float orange slices
on top. Serves 20

WILSON CREEK WINERY PART OF BIRTHDAY PLOYS!!!
On a recent Saturday, two very clever - yet thoughtful - husbands used a visit
to Wilson Creek Winery as the "perfect ploy" to get their wives out of the
house so preparations for Surprise Birthday parties could get under way at
their homes.
Member Marty Staszak brought his lovely wife, Teresa, and her parents and
children in ostensibly for a day of Wine Tasting. Marty shared the secret that
Teresa's relatives were flying in from across the country to be a part of the big
surprise! Marty and Teresa have been part of our “Extended Family” since
February 2004.
Members Bruce and Christine Holland came in allegedly to pick up their Will
Call shipment. Unbeknownst to Christine, friends and family were gathering at
their home to celebrate Christine's special day! Bruce and Christine have been
part of our Extended Family since December of 2002.
Following up after the big events, we found that both ladies were totally
surprised. We were just happy to be a part, however small, of their
wonderful birthday celebrations! Cheers to all involved!
Two other very special birthdays were celebrated recently right here in the
lower gardens at Wilson Creek on a beautiful Saturday afternoon. Jim and
Linda Church (Extended Family members since July 2001), wrote in to
share about their delightful afternoon and to thank us for helping to make the
birthday celebrations even more special. "All in all, it was a wonderfully
delightful day, thanks to all of your family and staff. Every visit or event we
have attended as Wine Club members has recalled our reason for joining the
Wine Club in the first place. Each has been more pleasant than the last.
We are very happy to be members of the Extended Family."

"I just wanted you to know how wonderful it is that you are doing
a label for USS THEODORE ROOSEVELT. Our family has a very
special tie to Her. Our daughter was baptized on the TR in 2002.
She is a 9/11 Baby, as my late husband was killed in the Pentagon
on 9/11. I was three months pregnant with Allie. I wanted to
fullfill her father's wish of having his child baptized on a ship.
He was a Commander in the Navy and had served aboard the TR
for five years. He truly loved the TR. The United States Navy did
everything they could to see that I could fulfill this dream of my
late husband. It was a wonderful day! I remarried, another Naval
Officer, and that has brought us to the Temecula area. He is the
CO for the 1st Medical Battalion at Camp Pendleton and is
currently deployed in Iraq. The great news is that he will be
returning home this Sunday (7/18) to open
arms! We can't wait to see him! Paul and
I are members of your Wine Club and love
visiting your winery... it always feels like
home. I know he is looking forward to
doing some wine tasting when he returns,
so we will see you soon! It is truly great
to see how much you support our troops and our Navy!" EDITOR
