Okra fry/Bhindi fry/Vendakka fry
Fried Okra or bhindi or the ladies’ finger is a very popular dish. There are various methods of frying.
The recipe here takes less of oil and is more tastier. It is made from okra, rice flour and some masala.
It is very crispy and goes well as a side dish or as a snack.
Cooking time: micro wave - 10 minutes, Oven (OTG) – 20 minutes
Ingredients
Okra / ladies’ finger/ Vendakkai - cut
: 250 gms
Rice flour
: 1 tablespoon
Besan flour
: 2 tablespoons
Lemon juice
: 1 lemon
Hing (asafoetida)
: a little
Coriander powder
: 1 teaspoon
Chilli powder
: ½ teaspoon
Turmeric powder
: a little
Salt
: as required
Cooking Oil
: a little
Method
1. Clean and dry wipe the okra. Cut into small pieces. Add half of lemon juice. Mix well
2. In a separate bowl add besan flour, rice flour, turmeric powder. Hing, coriander powder, chilli
powder and salt. Mix well. Sprinkle this mixture on the okra and see that the okra is coated
well with this mixture.
Microwave method:
3. Spread in a microwaveable plate and leave it in microwave high power for 5 minutes.
OTG method:
4. Pre-heat oven at 180 deg C for 5 minutes. Leave the okra on a baking tray lined with
parchment paper for 15 minutes at 180 deg C.
5. Remove the okra from the oven (from step 3 or 4) after the mentioned time.
6. Heat a pan in stove and add one teaspoon of oil. Transfer the oven fried okra and sauté for 2
minutes.
7. Serve the hot crispy okra fry.
