Cereal Bar into 12 even slices. Finely chop
remaining bars.
2 Spoon half the Weight Watchers Peaches into bases
of four 1-cup (250ml) capacity serving glasses. Top
with half the Nestlé Soleil Vanilla Flavoured Yoghurt
and sprinkle with finely chopped Weight Watchers
Strawberry & Blueberry Cereal Bar. Spoon over
remaining Nestlé Soleil Vanilla Flavoured Yoghurt
and Weight Watchers Peaches. Top each with 3 slices

Pancakes with walnut
yoghurt & honey
1 Sift flour into a medium
bowl and stir in sugar.
Whisk eggs, milk and
vanilla in a jug until
combined. Make a well in
the centre of flour mixture.
Add egg mixture and
whisk until smooth and
combined. Set batter
aside for 10 minutes.
2Place Weight Watchers Sour Cream
and Nestlé Soleil Vanilla Flavoured Yoghurt in a
medium bowl and beat until smooth and combined.
Stir in three-quarters of the walnuts.
3 Lightly spray a large non-stick frying pan with oil and
heat over medium heat. Spoon 1⁄3 cup (80ml) batter
into pan. Cook for 1–2 minutes or until bubbles rise to
the surface. Turn and cook for 1–2 minutes or until
pancake is lightly browned. Transfer to a plate and
cover to keep warm.
4 Repeat with remaining batter to make 8 pancakes.
Top pancakes with Weight Watchers Halved
Apricots, walnut yoghurt and remaining walnuts.
Serve drizzled with honey.

Yoghurt instead of Nestlé Soleil Vanilla Flavoured

▲▲ 3 rhubarb stalks (325g), thinly sliced
2 tbs caster sugar
▲▲ 150g frozen raspberries
2 tsp cornflour
¾ cup (105g) plain flour
2 tbs brown sugar
¼ cup (60g) Weight Watchers Canola Spread
2 x 34g Weight Watchers Nut Deluxe Bar,
finely chopped
1 Preheat oven to 180°C or 160°C fan-forced.
Lightly spray four 1-cup (250ml) ovenproof
dishes with oil. Place on a baking tray.
2 Combine rhubarb, caster sugar and 2
tablespoons water in a medium saucepan
over medium heat. Cook, covered, stirring
occasionally, for 4–5 minutes or until rhubarb
is tender. Remove from heat. Toss frozen
raspberries and cornflour in a medium bowl.
Stir raspberries into rhubarb mixture. Spoon
into prepared dishes.
3 Combine plain flour and brown sugar in a bowl.
Using fingertips, rub in Weight Watchers
Canola Spread until mixture resembles
breadcrumbs. Stir in Weight Watchers Nut
Deluxe Bar. Spoon crumble mixture over
rhubarb mixture in dishes. Bake for 20 minutes
or until crumble is golden. Serve.
SERVE WITH: Weight Watchers Creamy Vanilla
Ice Cream. Add 2 ProPoints values per serve for a
small (50g) scoop.

2 garlic cloves, crushed

3 cups (750ml) chicken stock
▲▲ 1 bunch (600g) English spinach, coarsely chopped
(see note)
1 cup (250ml) evaporated skim milk

1Heat Weight Watchers
Canola Spread in a
large saucepan over
medium heat. Add
leek and garlic and
cook, stirring, for 3–5
minutes or until leek
is softened.

2 Add potato, stock and
1½ cups (375ml)
water. Bring to the
boil. Reduce heat
and simmer, covered,
for 15 minutes or
until potato is tender. Cool for 10 minutes.
Add spinach. Cool for 5 minutes.
3 Using a stick blender or food processor, puree soup
until smooth. Return soup to low heat and add milk.
Stir for 2–3 minutes or until heated through. Season
with salt and freshly ground black pepper. Serve each
with 1 teaspoon Weight Watchers Sour Cream.
NOTE: You can use 300g baby spinach leaves or 350g
frozen spinach instead of a bunch of English spinach.
NZ MEMBERS: You can use Weight Watchers Natural
Yoghurt instead of Weight Watchers Sour Cream. The

125g Weight Watchers Bacon, thinly sliced
½ cup (75g) 97% fat-free semi-dried
tomatoes, chopped
2 tbs basil pesto

Tasty Grated Cheese
▲▲ 6 eggs
▲▲ ½ cup (125ml) skim milk
2 tbs pine nuts

Merlot
1 Preheat oven to 180°C or
160°C fan-forced. Lightly
spray a 20cm round cake
tin with oil. Line base
with baking paper.
2 Cook pasta in a large
saucepan of boiling
salted water, following packet instructions,
or until just tender. Drain.
3 Meanwhile, lightly spray a large non-stick
frying pan with oil and heat over high heat. Add
Weight Watchers Bacon and cook, stirring, for
4–5 minutes or until crisp. Drain on paper towels.
Combine pasta, Weight Watchers Bacon, tomatoes,
pesto and half the Bega So Extra Light Tasty Grated
Cheese in a large bowl. Place mixture in prepared tin.
4 Whisk eggs and milk in a medium bowl until
combined. Season with salt and freshly ground black
pepper. Pour egg mixture into tin and sprinkle with
pine nuts and remaining Bega So Extra Light Tasty
Grated Cheese. Bake for 25–30 minutes or until set.
Stand for 5 minutes before turning out onto a serving
plate. Cut into wedges. Serve.
NZ MEMBERS: You can use 97% fat-free bacon instead
of Weight Watchers Bacon and 50% reduced-fat grated
tasty cheese instead of Bega So Extra Light Tasty
Grated Cheese. The ProPoints values remain the same.

Dips are always a crowd-pleaser and are suitable for
almost any entertaining occasion. Serve as part of
a mezze platter, a fresh starter or a tasty snack.
Garlic mushroom dip
1 ProPoints values per 2 tbs serve
Serves: 9 | Prep: 10 mins Cooking: 5 mins
2 tsp olive oil
▲▲ 250g flat mushrooms, thinly sliced
▲▲ 3 green shallots, thinly sliced
2 garlic cloves, crushed
3 tsp plain flour
1 tsp grated lemon rind
½ cup (120g) Weight Watchers Sour Cream
2 tsp finely chopped fresh flat-leaf
parsley leaves
2 tsp finely chopped fresh chives
1 tbs finely chopped semi-dried tomatoes
1 Heat oil in a large non-stick frying pan over
high heat. Add mushrooms, shallots and
garlic and cook, stirring, for 3–4 minutes or
until tender.
2 Stir in flour and cook for 1 minute. Cool. Place
mushroom mixture in a food processor with
rind and Weight Watchers Sour Cream.
Blend until smooth. Spoon into a serving
bowl and top with parsley, chives and
semi-dried
tomatoes. Serve.

1 Preheat oven to 180°C or 160°C fan-forced.
Lightly spray a baking tray with oil. Place
sweet potato in a single layer on prepared
tray and lightly spray with oil. Season with
salt and freshly ground black pepper.
Bake, turning once, for 20–25 minutes
or until cooked.
2 Meanwhile, lightly spray a medium
non-stick frying pan with oil and heat over
medium-high heat. Add chicken and cook
for 3–4 minutes each side or until just
cooked through. Transfer to a plate and rest
for 5 minutes before slicing thinly.
3 Place bread on 2 pizza or baking trays.
Combine tomato paste and barbecue
sauce in a small bowl. Spread sauce mixture
over bread. Top with chicken and sweet
potato. Dollop with Weight Watchers
Cottage Cheese. Bake for 15–20 minutes
or until bread is crisp. Serve pizzas topped
with rocket.

Food products
All meeting food products have a ProPoints® value
of 2 or below, so that you can still enjoy snacks within
your daily ProPoints allowance or create healthy
meals from scratch.
Marinades
Marinades are an ideal subtle base to help you create
your own fresh meals at home. They are available in
two delicious flavours, Tandoori and Sweet Chilli,
Coriander & Lime. Each 150g pack serves two and
ranges from 1 to 2 ProPoints values per serve.
Nibblies
Nibblies are a tasty savoury rice snack, available
