Serves: 6 people Ready: 30 minutes
Prep Time: 25 minutes Cook Time: 5 minutes
Ingredients
6 Medium Eggs
1 Large Egg, whisked
2 packs 100g Specially Selected Applewood Smoked
Salmon, finely chopped
400g Salad Potatoes
30g Butter
30ml Double Cream
6g Fresh Parsley, finely chopped
20g The Pantry Plain Flour
3 slices White Bread
Black Pepper and Salt
Solesta Sunflower Oil, to deep fry
Make it
Boil the potatoes in salted water until soft – no need to
peel. Drain and mash with the butter and cream.
Add salmon, parsley and seasoning. Mix well.
Boil 6 medium eggs for 4 minutes, then plunge into cold
water. Make the bread into crumbs in a food processor.
Peel the cooled eggs.
Divide the salmon mixture into 6 balls and press an egg
into the centre of each until it’s completely enclosed.
Put the flour, whisked egg and breadcrumbs into
separate bowls and roll each egg in them in that order.
Lower the eggs, one at a time, into oil in a deep pan or
fryer at about 150°C and fry until golden brown, then
drain on a kitchen towel.

They’re a family-run business with Freedom Foods, Woodland Trust, British Lion
and RSPCA accreditations to prove that they love chickens as much as you love
eggs! Daniel, Sarah Louise, Sarah and Caroline have been involved with the
day-to-day running of the farm since they were kids. From humble beginnings
with their grandfather starting out with only 150 hens, today’s farms are on a
very different scale but the family ethos is still as deeply rooted!
This third generation of the Fairburn family grow and mill their own grain to
feed the chickens that they hand rear from birth – making them almost totally
self sufficient.
When you meet them you immediately sense how deeply they care for the
