On October 9, 2014 a record crowd made their way to St Georges Orthodox Cathedral the venue
for the 8th Annual Food and Wine Fest. This years event was in honor of the V. Rev. Fr. Nicholas
Apostola for his 20 years of dedication, devotion and service to EOMC and Holy Trinity Nursing
& Rehabilitation Center.
Fun, music, and fellowship may be important to our annual Holy Trinity Food and Wine Fest but if
you’re a foodie, the most important thing was the food, and this year’s event did not disappoint!
We hosted 23 restaurants, 7 wineries and breweries and our very own Holy Trinity Dietary Department. The food offerings ranged from pizza, chicken, lamb, crab cakes, shrimp, grape
leaves, spinach pie, humus, Greek yogurt and for your sweet tooth a variety of cakes, cookies,
and assorted pastries. BUT to the taste buds of many the best bite of the night was the Seafood

the seafood lasagna dish was. Everyone raved about it and in my "unbiased"

Friday – October 17, 2014 was an ordinary afternoon that turned extraordinary when we were witness to the exciting and emotional
moment for our resident Olga and her daughter as they get to see her grandson for the first time. Because of distance Olga had not yet
met her newest grandchild however; through our new Skype program, families are connected in a new way. The Activities Department
new program is taking off with excitement and tears of joy. We are all excited to see where this new opportunity will bring us!

October started off with our first Cultural Night, an event which will take us on a journey to experience a new
place each month. This month we traveled to Italy and explored the history and art work of the Sistine Chapel and even took a quick virtual tour of the actual building! The journey continued as we toured through the
open markets in Palermo Sicily, and traveled to Rome to Learn about the sculpture "The Mouth of Truth".
The tour was of course enjoyed with a slice of pizza and a glass of wine! At the end of the presentation, residents shared their own personal memories of Italy, and remembered fondly of its beauty. The tour was presented using the latest technology to give as realistic a tour as possible. We tried to bring Italy to Holy Trinity
for a night and it was so fun to do so!

STUFFED PEPPER SOUP – Serves 4
SEAFOOD LASAGNA – Serves 12
Ingredients:
Ingredients:
1 pound ground beef
2 cups heavy cream
½ cup diced green pepper
½ cup fish stock
¼ cup diced onion
Salt, ground pepper, oregano and basil to taste
¼ cup diced celery
1 cup roux
1 cup diced tomatoes
1 # Lobster
3 cups beef stock
1 # Shrimp
1 cup uncooked white rice
1 # Scallops
Salt and ground pepper to taste
1 tsp. minced garlic
Parsley, garlic and cinnamon to taste
1 lb. ricotta cheese
Directions:
½ cup parmesan cheese
1.
Brown ground beef in a frying pan until thoroughly cooked, drain excess fat.
1 egg
2.
Sautee green pepper, onion and celery in a
soup pot. Pour in ground beef, diced tomatoes
and beef stock. Season with salt, pepper, parsley, garlic and cinnamon. Bring to a boil, reduce
heat and simmer.
3.
2 cups mozzarella cheese
1 box no-bake lasagna sheets
Directions:
1.
Heat heavy cream, fish stock, salt and pepper in sauce
pan, add roux.
2.
Combine seafood in a separate bowl, fold in sauce.
3.
Mix ricotta, garlic, parmesan, oregano, basil and egg in a
separate bowl.
4.
Spread small spoonfuls of seafood mixture on bottom of
13x9 pan.
5.
Layer with lasagna sheet, seafood mixture, ricotta mix and
mozzarella. Repeat.
6.
Top layer will be lasagna sheet with mozzarella cheese.
7.
Cook in 350 degree oven for one hour.
Add white rice and cook until tender.
Do you know what our Unit Secretary – Collette Gage does on her September vacations? Hmm… take a trip, go on a cruise? Well you can
find Collette and her Alpaca’s Dusty, Silver Bullet and Silver Streak at
the annual Big E - Eastern State Fair in Springfield, MA. Collette and
her family enter several competitions including the Alpaca, fiber and
fiber nook events. This year they came home with a total of 13 Ribbons. When you see Collette congratulate her and ask her about her
family farm and Alpaca’s!
Linnea Budd daughter of our HTNR employee Pureza
Budd – Rehabilitation Department was appointed as
one of the two student representatives to the Wachusett
Regional School Committee. Linnea said,. “I enjoyed
learning about the procedures for raising questions and
I like discussing issues.”
On September 28th Christina Zona our Holy Trinity C.N.A. on
the Village Unit walked in the UMASS Medicine Cancer Walk.
Christine participates each year in this fundraiser in memory
of her father Larry and for everyone who suffers from cancer.
Thank you Christina for making a difference………
