Inside this issue:
It’s February, among other things a month filled with heart, love and of course the color
PINK!!!! What do I love besides the color pink? I love that I get to be part of such a wonderful organization such as the Eden Prairie Women of Today. February is also American
Heart Month! Heart disease, including stroke, is the leading cause of death for men and
women in the United States. Did you know that volunteering is good for your heart? So is
friendship and a sense of belonging which are all things you get with being a member of
the Women of Today.
What are some additional things you can do to keep your heart healthy?:
1. Watch your weight.
2. Quit smoking and/or stay away from second hand smoking.

5. Talk to your doctor about taking aspirin everyday if you are a man over the age of 45,
or a woman past menopause.
6. Manage STRESS!!!! I know this is much easier said that done & I am speaking from
experience.
7. Eat healthy.
8. Get your blood pressure checked regularly.
Before I conclude my February article I want to take a moment to congratulate all of you
as Eden Prairie was number 1 for SUCCESS at Winter State Convention. Way to GO!!!!!!
What an awesome chapter we have! Congratulations also goes out to our State Delegate
Suzanne Smith for receiving a State Delegate Medallion, Tessa Sargent for receiving a
Presidential Pin and Sue Ellen Toppings for receiving a US Women of Today medallion for
her work on the State Level with PR. All in attendance and convention had a wonderful
time! I look forward to celebrating an even more successful third trimester with all of

A March of Dimes Challenge! From Fay C. and Erin T.
(Let the battle of the Ages Begin!)
From The Challenger—Fay:
A few of us more experienced members were walking at halls at the mall (trying to get
rid of those extra Christmas cookies that we ate) and a light bulb went off and we came
up with a great Eden Prairie Women of Today Challenge.
THE EXPERIENCED MEMBERS (those over 40) CHALLENGED THE
YOUNGER MEMBERS (those under 40) TO A WALK OFF TO HELP RAISE
FUNDS FOR THE MARCH OF DIMES.
What does this mean…..We believe that the members with more life experienced can get more over 40
people to sign up and walk the March for Babies on Sat April 29th at 11:00 AM than the young whippersnappers of our organization. Erin S is chairing the March of dimes walk and has accepted the challenge
for the youngsters in our group.
The electronic savvy members (probably those who know how to use the internet) will post the website
of March of Dimes so we can all sign up for the Eden Prairie Team. We are all part of the same team we
are just an A and B part. A is for Aged to Perfection members and B is for the Beautiful Young Whippersnappers members (Team A has 4 walkers already).
I have taken the initiative and called on my land line to Under Armour and got
them to sponsor us with matching shirts for our walk. Erin and I will let you know
what style and color that we picked at our Feb meeting. I need every one to sign up
for the walk by our March meeting so I can get the correct sizes.

We will help Team A remember with written notes and personal phone calls
Team B can put all their information on their I-phones, I-pads and laptops.

I received a personal note from Fay challenging me. She's been plotting with our experienced members for a while, via mail, telephone and, gasp! in person!!! The challenge is that
the group of women over 40 can bring more participants to the table than those 40 and under. She may have a couple weeks of plotting ahead of us (mail takes so long!), but we have
the advantage of cutting edge technology. So my tech savvy 80's and 90's generation, put your
texting thumbs to use, fire up your twitter feed, work your facebook network. I challenge
you to walk with me on April 29th.
I challenge you to bring a friend! Lets raise money, raise our heart rates and most importantly, have the biggest team presence we can at the annual March of Dimes March for Babies!

Thank you so much Fay, for opening your home to us. The Cocoa with all of the extra additions was a yummy treat.
Being able to munch on cookies and brownies in front of the cozy fire with the wonderful background music was so
warm and comforting. We had seven in attendance and really enjoyed getting to know each other better. Can’t wait
for the next one.

Yummy Recipes!
Here's a yummy recipe for soup lovers: From Tessa!

Curried Sweet Potato and Lentil Soup
Makes 6 servings
2 tablespoons olive oil
1 onion chopped, about 1 cup
1 cup chopped carrot, about 2 large
3 cups peeled and chopped sweet potato, about 1 1/2 lbs
2 cloves garlic
1/8 teaspoon cayenne powder
1/2 heaping tablespoon curry powder
1 cup dry red lentils
6 cups vegetable or chicken stock
1/4 heavy cream or half and half
about 1 tablespoon fresh lemon juice
Salt and pepper to taste
Directions:
1. In a heavy bottomed saucepan (at least 5 qt) over medium heat, heat the olive oil and add the chopped onion. Cook
until onions are soft and translucent, about 5 minutes. Add the chopped carrot and sweet potato. Mix to coat with the
olive oil and cook for 5 minutes, mixing occasionally. Add in the garlic, cayenne powder, and curry powder, and cook for
1 minute until fragrant. Add in the lentils and mix until they are all coated, about 1 minute.
2. Add in the stock, and reduce heat to medium-low, and cook until vegetables are tender and the lentils are cooked
(exploded). Remove from heat and puree with immersion blender, or puree in blender in batches.
3. Once it is all pureed, add in the cream and combine. Season with salt and pepper. Add in the fresh lemon juice.
Serve.

Here's a quick and easy recipe that most have probably tried but
never hurts to refresh a memory:
Pickle roll up
1.) Pickle
2.) sliced meat of choice...ham, turkey...ect.
3.) spreadable cream cheese.
Spread cream cheese on lunch meat wrap a pickle in it....done... and enjoy!

Yummy Recipes from Gail’s Cookie Bake! (just a handful of many many more!)
Oreo Truffles (Suzanne) These would be great for Valentine's Day sprinkled maybe with red sprinkles and placed
in a nice container with a pretty bow. (for a low budget chocolate gift)
1 pkg. (8 oz.) Cream Cheese, softened
1 pkg. (15.3 oz.) OREO Cookies, finely crushed (I use a food processor)
1 pkg. Nestle chocolate chips - melted (may have to add some vegetable oil to
chocolate to thin it out)
Crushed peppermint candy canes or peppermint candy rounds
-Mix cream cheese and cookie crumbs until well blended with a wooden spoon.
-Shape into 48 (1-inch) balls. Dip into melted chocolate; place on waxed paper-covered baking sheet.
-Sprinkle with peppermint.
-Refrigerate 1 hour or until firm.
How to Easily Dip Truffles:
To easily coat truffles with the melted chocolate, add truffles, in batches, to bowl of melted chocolate. Use 2 forks to
roll truffles in chocolate until evenly coated. Remove truffles with forks, letting excess chocolate drip back into
bowl. Place truffles on prepared baking sheet; sprinkle with peppermint; place in refrigerator to firm up.
Store in tightly covered container in refrigerator
Heath Bars (Tami)
-Approximately 1 and ½ packages of graham crackers (not boxes!) about 40 pieces when broken into small squares
-2 sticks butter - melted
-½ c sugar
-Slivered or sliced almonds
Directions:
-Place graham crackers on a cookie sheet with sides (jelly roll pan). Lay end to end with not spaces on pan
-Mix melted butter and sugar in a pot and boil for 2 minutes. Do not stir much!
-Pour mixture over graham crackers.
-Sprinkle with almonds.
-Bake 325 degrees for 10 – 12 minutes
-Remove from cookie sheet and let cool for about 2 minutes.
-Remove to waxed paper sprayed with oil.
Note: If they are too hot they will stick to waxed paper

Cherry Chocolate Kisses (Beth K.)
yield: about 4 dozen
1c powdered sugar
1c margarine or butter, softened
2 tsp maraschino cherry juice
1/2 tsp almond extract
Few drops of red food color
2 1/4c all-purpose or unbleached flour
1/2 tsp salt
1/2 c. maraschino cherries, drained, chopped
About 48 milk chocolate candy kisses
-Heat oven to 350 degrees.
-In large bowl, combine powdered sugar, margarine, cherry juice, almond extract and food color; blend well.
-Lightly spoon flour into measuring cup; level off.
-Stir flour and salt into dough; mix well. Stir in cherries.
-Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets.
-Bake at 350 degrees for 8 to 10 minutes or until edges are light golden brown.
-Immediately top each cookie with candy kiss, pressing down firmly; remove from cookie sheets to wire racks to
cool.
Snickerdoodles: (Toni's mother-in-law)
1/2 cup butter or margarine, softened
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon soda
1/4 teaspoon salt
2 tablespoons sugar
2 teaspoons cinnamon
Heat oven to 400. Mix thoroughly butter, shortening, 1 1/2 cups sugar and the eggs. Blend in flour, cream of tartar,
soda and salt. Shape dough by rounded teaspoonfuls into balls.
Mix 2 tablespoons sugar and the cinnamon; roll balls in mixture. Place 2 inches apart on ungreased baking sheet.
Bake 8 to 10 minutes or until set. Immediately remove from baking sheet.

Butterscotch Haystacks (or as my son calls them Hale Bales– from Toni K.)
1 package butterscotch chips
1 package chow mein noodles
Heat butterscotch chips in microwaveable container, stir, mix noodles in
and scoop tablespoon size clumps onto wax paper or foil. Let set and enjoy!
Madeleines (Amber S)
Ingredients
2 large eggs
2/3 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon grated lemon peel
1 pinch salt
1 cup all-purpose flour
10 tablespoons unsalted butter, melted, cooled slightly
powdered sugar
Directions
Preheat oven to 375°F Generously butter and flour pan for large madeleines (about 3x1 1/4 inches).
Using electric mixer, beat eggs and 2/3 cup sugar in large bowl just to blend. Beat in vanilla, lemon peel and salt.
Add flour; beat just until blended. Gradually add cooled melted butter in steady stream, beating just until blended.
Spoon 1 tablespoon batter into each indentation in pan. Bake until puffed and brown, about 10-16 minutes. Cool 5
minutes. Gently remove from pan. Repeat process, buttering and flouring pan before each batch. (Can be made 1
day ahead.).
Dust cookies with powdered sugar.

Consider Being on the Board! Officer Position Definitions and Responsibilities:
President
o Presides over meetings of the chapter including setting an agenda for each meeting. The entire board should assist in finalizing the agenda.
o She also oversees other officer positions, assisting when necessary.
o Attends as many district, state, and area meetings as possible.
o She may also assist in the completion of SUCCESS each quarter and submit a year- end and/or mid- year evaluation.
o Complete monthly reports
o Attends training (LOTS, District)
o Assists with chapter training of board
o Assists with chapter training of local program managers if requested
State Delegate
o The official liaison between the chapter and the district and state organization.
o Should attend as many district and state meetings as possible.
o Responsible for RSVPing for district, state, and area meetings.
o Report to chapter about the highlights of convention and other meetings after attending.
o May also submit a year- end and/or mid- year evaluation.
Internal and External Vice Presidents (IVP) (EVP)
o Encourages local program managers (LPM).
o Helps orientate the LPMs.
o Reminds LPMs of quarterly report deadlines.
o Helps recruit members to take programming positions.
o Assists in reporting in the areas that do not have an LPM.
Membership Vice President (MVP)
o Assists the chapter with membership responsibilities including renewals, membership nights, orientation of new members,
and installation of new members.
Secretary
o Keeps the official minutes of each meeting.
o May also serve as the official contact with the PALS chapter.
o May coordinate chapter newsletter.
Treasurer
o Keeps track of the chapter finances.
o Manages the checkbook and reports the financial status of the chapter at each meeting.
o Assist with annual Audit
Parliamentarian
o Reads the orders of the day at each meeting.
o Establishes if there is a quorum at the meeting.
o Assists in the voting process.
o May be chair of the Bylaw/Policy review committee.
These officers, along with the past president, will make up the chapter board. The chapter board meets the first Thursday of the
month to discuss the agenda for the upcoming general membership meeting.

LPM Position Descriptions
LPM Positions:
Not quite ready for a position on the board? Consider getting your feet wet and
learning more about our organization with an LPM position. LPM’s (Local Project
Manager’s) update the chapter on information happening at the state level or
other in their respective areas and also may bring ideas to the chapter for events
in their particular area! Please note that the LPM for each area does not need to
come up with the idea for all projects in her are and does not need to chair them
all. In addition to keeping the chapter updated on your area as an LPM you are
responsible for attending the LPM training which is usually held sometime in May
and for completing quarterly LPM reports and sending them to your District Program Manager, State Program Manager and External or Internal Vice President. These reports consist of information for the projects held by the chapter for your programming area including a description of the event, date, time
and number of volunteers. You will also provide a short verbal report at chapter meetings and introduce the project
chairs for any events that fall under you so they can provide an update on the event. Here is a list of each of the
LPM positions available.
Internal Programming
1. Newslet-responsible for putting together EPWT’s monthly news letter. You do not need to write all of the articles,
just gather them and put them together in a pretty format.
2. Ways & Mean’s-responsible for encouraging chapter fundraisers such as $5 for Friendly & promoting Minnesota
Women of Today fundraisers.
3. Records & Recognition-responsible for assisting with success and ensuring members are filling out the events
book in order to keep track of event participation. Amber Stoner has already volunteered to take this position for
the 2012-2013 calendar year.
4. Living & Learning-responsible for encouraging participation in Women of Today certifications and Personal Enrichment Courses.
5. Public Relations-this person is responsible for getting the word out about EPWT including but not limited to submitting articles to the local paper and advertising on Facebook.
External Programming
1. Community Connections-responsible for working with community organizations of interest to you or the chapter
as warranted, supporting members who bring up ideas for community events such as BINGO. This person would
also be responsible for relaying information from the State Program Manager for Community Connections.
2. Women’s Wellness-responsible for promoting information or activities involving women’s wellness locally and
from the State Program Manager.
3. Youth of Today-responsible for promoting information or activities involving Youth locally and from the State
Program Manager, for example local school supply drives or Crisis Nursery.
4. Issac’s Journey which will replace Can Do Canines: mission of the Isaac's Journey... Where HOPE begins Foundation is to educate and raise awareness of Childhood Cancer and help fund research projects. We HOPE to change
cure rates for our future generation as every advancement in curing childhood cancer has come through research.
This LPM will be responsible for sharing information and happenings within this organization.

A Story about a Woman’s Heart Attack Experience, from Nancy Cohen
I was aware that female heart attacks are different, but this is the best description I've ever read. (stated by an ER nurse).
Women and heart attacks (Myocardial infarction). Did you know that women rarely have the same dramatic symptoms that
men have when experiencing a heart attack; the sudden stabbing pain in the chest, cold sweat, grabbing the chest & dropping to the floor that we see in the movies. Here is the story of one woman's experience with a heart attack.
'I had a heart attack at about 10:30 PM with NO prior exertion, NO prior emotional trauma that one would suspect might
have brought it on. I was sitting all snugly & warm on a cold evening, with my purring cat in my lap, reading an interesting
story my friend had sent me, and actually thinking, 'A-A-h, this is the life, all cozy and warm in my soft, cushy Lazy Boy
with my feet propped up.
A moment later, I felt that awful sensation of indigestion, when you've been in a hurry and grabbed a bite of sandwich and
washed it down with a dash of water, and that hurried bite seems to feel like you've swallowed a golf ball going down the
esophagus in slow motion and it is most uncomfortable. You realize you shouldn't have gulped it down so fast and needed to
chew it more thoroughly and this time drink a glass of water to hasten its progress down to the stomach. This was my initial
sensation--the only trouble was that I hadn't taken a bite of anything since about 5:00 p.m.
After it seemed to subside, the next sensation was like little squeezing motions that seemed to be racing up my SPINE
(hind-sight, it was probably my aorta spasms), gaining speed as they continued racing up and under my sternum (breast
bone, where one presses rhythmically when administering CPR).
This fascinating process continued on into my throat and branched out into both jaws. 'AHA!! NOW I stopped puzzling
about what was happening -- we all have read and/or heard about pain in the jaws being one of the signals of an MI happening, haven't we? I said aloud to myself and the cat, Dear God, I think I'm having a heart attack!
I lowered the foot rest dumping the cat from my lap, started to take a step and fell on the floor instead. I thought to myself,
If this is a heart attack, I shouldn't be walking into the next room where the phone is or anywhere else... but, on the other
hand, if I don't, nobody will know that I need help, and if I wait any longer I may not be able to get up in a moment.
I pulled myself up with the arms of the chair, walked slowly into the next room and dialed the Paramedics... I told her I
thought I was having a heart attack due to the pressure building under the sternum and radiating into my jaws. I didn't feel
hysterical or afraid, just stating the facts. She said she was sending the Paramedics over immediately, asked if the front
door was near to me, and if so, to un-bolt the door and then lie down on the floor where they could see me when they came
in.
I unlocked the door and then laid down on the floor as instructed and lost consciousness, as I don't remember the medics
coming in, their examination, lifting me onto a gurney or getting me into their ambulance, or hearing the call they made to
St. Jude ER on the way, but I did briefly awaken when we arrived and saw that the radiologist was already there in his surgical blues and cap, helping the medics pull my stretcher out of the ambulance. He was bending over me asking questions
(probably something like 'Have you taken any medications?') but I couldn't make my mind interpret what he was saying, or
form an answer, and nodded off again, not waking up until the Cardiologist and partner had already threaded the teeny
angiogram balloon up my femoral artery into the aorta and into my heart where they installed 2 side by side stints to hold
open my right coronary artery.
I know it sounds like all my thinking and actions at home must have taken at least 20-30 minutes before calling the paramedics, but actually it took perhaps 4-5 minutes before the call, and both the fire station and St Jude are only minutes away
from my home, and my Cardiologist was already to go to the OR in his scrubs and get going on restarting my heart (which
had stopped somewhere between my arrival and the procedure) and installing the stints.
Why have I written all of this to you with so much detail? Because I want all of you who are so important in my life to know
what I learned first hand.
1. Be aware that something very different is happening in your body, not the usual men's symptoms but inexplicable things happening (until my sternum and jaws got into the act). It is said that many more women than
men die of their first (and last) MI because they didn't know they were having one and commonly mistake it as
indigestion, take some Maalox or other anti-heartburn preparation and go to bed, hoping they'll feel better in
the morning when they wake up... which doesn't happen. My female friends, your symptoms might not be exactly like mine, so I advise you to call the Paramedics if ANYTHING is unpleasantly happening that you've not
felt before. It is better to have a 'false alarm' visitation than to risk your life guessing what it might be!

2. Note that I said 'Call the Paramedics.' And if you can take an aspirin. Ladies, TIME IS OF THE ESSENCE!
Do NOT try to drive yourself to the ER - you are a hazard to others on the road.
Do NOT have your panicked husband who will be speeding and looking anxiously at what's happening with you
instead of the road.
Do NOT call your doctor -- he doesn't know where you live and if it's at night you won't reach him anyway, and if
it's daytime, his assistants (or answering service) will tell you to call the Paramedics. He doesn't carry the equipment in his car that you need to be saved! The Paramedics do, principally OXYGEN that you need ASAP. Your Dr
will be notified later.
3. Don't assume it couldn't be a heart attack because you have a normal cholesterol count. Research has discovered that a cholesterol elevated reading is rarely the cause of an MI (unless it's unbelievably high and/or accompanied by high blood pressure). MIs are usually caused by long-term stress and inflammation in the body, which
dumps all sorts of deadly hormones into your system to sludge things up in there. Pain in the jaw can wake you
from a sound sleep. Let's be careful and be aware. The more we know the better chance we could survive.
A cardiologist says if everyone who gets this mail sends it to 10 people, you can be sure that we'll save at least one life.

MN Women of Today - Winter State Convention 1/27-1/29/12
Thank you everyone for the great turnout at the convention this past weekend. I am proud to say that we had 18
members attend either all weekend or pop in for different events during the weekend. It gave us all a chance to
meet other women that are members from around the state and share new ideas. Save the date for the next annual
convention which will be May 18-20 @ Grand Casino Hinckley hosted by the Fridley Women of Today.

Feed My Starving Children volunteer opportunity from Kim Behning
EPWT has 10 spots reserved with Feed My Starving Children in
Chanhassen on 5 occasions through the rest of 2012. We will work within groups to create food packs to
be distributed to countries that have children and families in need of proper nutrition. It is a great heartwarming experience and we would love to have many volunteers as possible.

Go Red for Women! From Erin S.
If you haven’t heard already, February is appropriately Heart Health Awareness month.
During this month the American Heart Association wants us all to help raise awareness
by dressing in red on Friday, February 3rd.
Did you know heart disease is the number one killer of women causing 1 in 3 deaths?
Did you also know it’s preventable for most people? We don’t all need to run marathons,
or even run for that matter. Below are 5 ways you can cut your risks! (taken from
promotional materials from the American Heart Association.
1. Be active: AHA recommends at least 30 minutes of moderate to vigorous physical activity
a day. (It doesn’t even have to be 30 minutes at one time!)
2. Eat smart: Enjoy a diet low in sodium, saturated fat and trans fat, and rich in fruits,
vegetables, fiber-rich whole grains, and monounsaturated fat and polyunsaturated fat.
3. Evaluate your risk: Age, gender, race/ethnicity, family history and other medical
conditions can all increase your risk of developing heart disease. Know which factors
affect you and what you can do to reduce them.
4. Listen to your heart: When warning signs pop up, pay attention to them. By visiting a
doctor early, your chances of avoiding a serious condition increase.
5. Know the facts: Read up on heart disease. By knowing about the culprit, you will be
better prepared to help prevent and fight it.

Project Linus Fleece Blankets from Cyndy M.
Eden Prairie Women of Today and the girls at ABD House will be
getting together at Star Bank (same place where we have our
monthly meetings) to make fleece blankets for "Project Linus."
 Saturday, February 25th from 11:00 a.m. to approximately 1:00 p.m.
If you are willing and would like to, please bring along a snack
for all to share. (chips, crackers, cookies, etc...)I will provide
the beverages.

Book Club from Kim B.
The first two selections for the EPWT Book/Movie club are Hunger Games by Suzanne Collins and The Lucky One
by Nicholas Sparks. For the Hunger Games we will tentatively meet at Eden Prairie AMC (at Eden Prairie Center)
the evening of Tuesday, March 27 and for The Lucky One we will tentatively meet on Tuesday, April 24 (a firm
date and time will be communicated once the theater releases the movie times). Please join me after the movie for a
discussion and a bite to eat (location to be determined). At this time AMC ticket price is $5.00 for a movie before 6PM

About our Organization…. The Eden Prairie Women of Today is a dynamic and diverse women’s organization interested in the betterment of our community. We are not politically or religiously affiliated. We
are women from various backgrounds, communities, and life experiences.
We are working women, mothers, homemakers, grandmother’s, married and single women.
We are women, who want to make our communities a better place for all of us to live.
We volunteer our time, raise funds for charities, and provide informational seminars that are open to the
public. Our members choose the projects they want to participate in, given their interest and time availability. Members can be as involved as they want to be. Most group events take place in the evenings or
on weekends.
We are also interested in bettering ourselves and having fun.
We have speakers attend our meetings, challenge ourselves to improve our communication skills, gather
to develop new talents and plan social events. The wide range of opportunities that Women of Today offers is one of the elements that make it unique. There is something for every woman and new ideas are
