Meet Chef Chris Malham
LWTC Culinary Arts Instructor
Chef Malham earned his Culinary Arts
degree from Johnson & Wales University in
1986 and his Associate of Science Liberal
Arts degree from Regents College in
Albany, New York in 1996. He has served as
Master Chief in the United States Navy for
24 years. During his Naval tour in Naples,
Italy, he was responsible for the official
entertainment and meal preparations
for Supreme Allied Commander, Wesley
Clark, Joint Chief of Staff, Henry Shelton,
Secretary of the Navy, Danzig and multiple
other high-ranking officials from NATO.
Chef Malham’s civilian credentials include
Pastry Chef and Baker. He received the
Certified Executive Chef certification from
the American Culinary Federation in 2002
and has been an adjunct instructor for
Gulf Coast Community College since Fall
semester 2001. Chef Malham also attended
the International School of Confectionery,
where he studied chocolate and sugar work
under the instruction of the famous
Ewald Notter.

Meet Our Instructors
Meet Rick Smith,
LWTC Creative Writing Instructor
Rick Smith has been writing for over
46 years. He has two books of poetry
published, one of which, “A Sweeter
Understanding”, was the 2007 winner of
a Silver Medallion Award as part of the
Benjamin Franklin Award Series. His first
Anthology, of over five hundred poems,
was written as “Poor Man’s Poetry.” He has
been teaching Creative Writing at the City
of Redmond Senior Center during 2008.
Mr. Smith is the founder of the New Poet’s
Society, a non-profit group created to
sponsor poetry contests in high schools
where students compete for scholarships.

Home Décor Sewing Basics

This class is for those who are beginners and
new sewers. We will learn sewing machine
usage and care, how to select the tools/supplies
needed for home décor sewing; insert invisible
zippers, turn corners for pillows, cut and sew
welt cord, join difficult cording other basic
sewing techniques that are used continuously.
Projects will include decorator pillow, designer
table runner, and more using the machines in
