In 2011, KCTS 9 joined a groundbreaking public media partnership
of Pacific Northwest public television and radio stations to create
EarthFix—an innovative approach to helping citizens examine the
environmental issues unfolding in their own backyards. EarthFix has
since won multiple prestigious awards, and several of KCTS 9’s EarthFix
stories with environmental reporter Katie Campbell have received
national exposure on PBS NewsHour.
This May, following brand-new episodes of Nature, we are premiering
two KCTS 9/EarthFix programs that you won’t want to miss. Wildlife
Detectives: The Hunt for Northwest Poachers (May 20), and Wildlife
Detectives: The Poaching of Puget Sound (May 27) expose the black
market poachers who plunder our forests and beaches, and prey on our
wildlife. Katie Campbell and her EarthFix colleagues have been working
diligently for more than a year to bring to light the gripping stories of
our local wildlife officers’ efforts to protect the public and preserve our
unique Northwest ecosystems.
Understanding the natural world and the value of our natural resources
is key to ensuring that those resources remain intact for future

Potato Chip Chicken SERVES 8
2 tablespoons seasoned salt
8 boneless chicken breasts
1B/c cups flour
6 eggs
B/c cup milk
2 10-ounce bags of your favorite potato chips, crushed (We use the ruffly kind.)
3 tablespoons cracked black pepper
1 cup olive oil or canola oil
Preheat the oven to 375 degrees. Sprinkle the seasoned salt over the tops of the chicken breasts.
Prepare three wide, shallow pie plates or bowls for the coating. In the first, place the flour. In the
second, whisk together the eggs and milk. In the third, place the crushed potato chips mixed
with the black pepper.
If the chicken breasts are large, consider serving size and cut them in half if desired. Coat the
chicken breasts in the flour, shaking off the excess, then dip in the egg mixture, then the potato
chip mixture, pressing to stick the crumbs to the chicken.
In a large, heavy skillet, heat the oil over medium heat, to about 350 degrees. You’ll need 1 cup oil, or
enough to cover the bottom of the pan. Carefully add the chicken, skin side down. Cook the chicken
until the crust is golden brown, 5 to 6 minutes per side. Don’t overcrowd the pan; it’s better to
brown the sides in batches.
On a large rimmed baking sheet, sprinkle any leftover crushed potato chips from the third bowl.
Arrange the browned chicken on top, leaving some space between pieces. Bake 15 to 20 minutes,
until the chicken is cooked through. Let rest for 5 minutes and serve with Oven-Roasted Asparagus
