Rum Balls and cake from Susie’s Bakery and Coffee Bar, Southdale Plaza, Kingston Rum balls are the perfect indulgence and they are great for holiday parties. Crunchy Rum Balls 2 1/2 cups finely crushed vanilla cookie wafers n 2 tablespoons unsweetened cocoa powder n 1 cup confectioners' sugar (plus sugar for coating) n 1 cup finely chopped walnuts n 3 tablespoons corn syrup n 1/4 cup dark rum n 1: In a bowl, mix crushed wafers, cocoa, 1 cup confectioners' sugar and walnuts. 2: Add corn syrup,and rum. Mix. 3: Form into 1-inch balls and roll in confectioners' sugar to coat. Makes about 48 rum balls. QUiCKtips - For maximum flavour, toast pecans. - To better control the stickiness of the batter, chill for about 30 minutes and lightly butter the palms of my hands before forming balls. - Roll balls in white sugar, cocoa powder or chopped nuts. Taste better if left for a few days to allow flavours to mingle and soften. Butter Rum Sauce 1 cup sugar 1 cup half and half, evaporated milk or whipping cream n 1/2 cup butter 1/2 cup dark rum n n 1: In medium saucepan, bring to boil sugar, cream and butter. 2: Reduce heat, simmer, uncovered, stirring frequently, for 5 minutes. 3: Remove from heat and stir in rum. Makes 2 cups. Serve warm over rum cake or rum balls. Makes 2 cups. Answer the call for delicious eggnog Creamy Smooth Egg nog Low Calorie Egg Nog 6 eggs n 1 cup sugar n 1/2 teaspoon vanilla extract n 1/4 teaspoon ground nutmeg n 3/4 cup dark rum n 1/3 cup brandy n 2 cups whipping cream n 2 cups milk n Nutmeg n n 1: Beat eggs until very frothy. 2: Gradually beat in the sugar, vanilla and nutmeg. 3: Stir in cold rum, brandy, whipping cream and milk. 4: Chill. Sprinkle nutmeg on top before serving. Makes about 10 cups. 2 eggs, separated 4 cups skim milk n 1 teaspoon vanilla n 2 teaspoons sugar substitute n 1/4 cup dark rum n 1 dash nutmeg n 1: Combine the egg yolks and milk in a saucepan. 2: Cook over medium heat until the mixture coats a metal spoon. Let cool. 3: Beat egg whites until they form soft peaks. 4: Add to milk mixture, add vanilla, sugar substitute, and extract. 5: Mix lightly. Cover and chill. Sprinkle nutmeg on top before serving.
