I can still see her in my minds eye. Her bustling around to make dinner for the family. Thanksgiving time is when everyone gathered and the table was resplendent with a golden brown turkey and cornbread dressing, mashed potatoes and gravy, candied yams, green bean and creamed corn, cranberry sauce and mouth watering yeast rolls. Not to be forgotten was the pumpkin, mincemeat and pecan pies. Well. now that we have stuffed ourselves trying everything put in front of us and moaning since we ate to much. What do we do with the leftovers? On grandma’s summer porch sat the answer - The Pie Safe. I always admired her pie safe and hoped someday to own one - alas, not all dreams come true. The pie safe was a piece of furniture with a very important purpose. It was almost always made of wood with tin panels or screen in the doors and sides allowing ventilation and thusly keeping the food inside cool. The safe was placed away from the stove to avoid the heat and was usually by the sink or many times in a pantry or on a porch. A pie safe had deep shelves and many had legs to keep it off the floor or it was hung or stood on a cabinet keeping it safe from insects or mice. This type of cabinet many times is refered to as a jelly cabinet. Many credit the German immigrants that settled in Pennsylvania with bringing their piece safes with them when they came to America. Popular during the 18th and 19th century the pie safe became an important piece of kitchen furniture. Today many homes are being graced with these wonderful pieces of furniture. Here is a fine example of a two part pie safe. The box that holds the food sits on top of a separate stand with legs. This keeps the safe off the ground for added protection.
